The influence of pasteurization temperature and time of treatment on the flesh firmness and the evolution of microbial communities was studied for table olives Cv. Nocellara del Belice, packed in glass jars and processed with a tunnel pasteurizer. The experiment was first carried out on the laboratory level in order to select the optimal combination of pasteurization time/temperature so as to obtain the proper balance between the consistency of the pulp and the microbiological quality of the final product. The objective of this study was to measure and monitor changes in Achilles tendon mechanical properties and force production capability of triceps surae muscles after 4 wk of limb suspension and 6 wk of physical rehabilitation. Five healthy volunteers underwent unilateral lower limb suspension followed by weekly physiotherapy. A velocity-encoded, phase-contrast magnetic resonance imaging (VE-PC-MRI) technique was used to estimate the tendon strain as a function of force produced during the submaximal isometric contractions. Fatigue effects of marathon running on neuromuscular performance

Nine experienced endurance runners performed individual marathon runs that involved several tests of neuromuscular performance before, during and after the marathon. The tests were performed with special force platform and dynamometer techniques. The results showed an overall decrease in performance from the marathon. The maximal sprint velocity decreased parabolically during the marathon, reaching the final value of 84% of the pre-marathon one. Similarly, the other test results after marathon indicated that maximal isometric knee extension torque was 78%, the performance in a special rebound test (drop jump) 84% and the 5-jump performance 92% of the pre-marathon values. The purpose of the study was to compare elbow flexion peak torque (PT) and fatigue index (FI) during isokinetic concentric contractions in men and women with different training levels. Sixty-eight young men and women were divided into four groups: resistance trained men (RTM), non-resistance trained men (NRTM), resistance trained women (RTW) and non- resistance trained women (NRTW). Participants performed two tests on an isokinetic dynamometer, one to evaluate PT and one to evaluate FI.
