Effect of high methoxyl pectin on pea protein in aqueous solution and at oil/water interface

International audience; The effect of the addition of high methoxyl pectin on the stability of pea protein isolate emulsions was investigated. Except for low pectin concentrations at acidic pHs where bridging flocculation occurred the addition of pectin improved emulsion stability to pH changes and depletion flocculation induced by maltodextrin addition. The mechanism of pectin induced stability was probed by measuring protein-pectin complex formation in solution, zeta potential of the emulsions droplets and the change in surface viscoelasticity on pectin addition. Numerical study of two-dimensional wet foam over a range of shear rates

The shear rheology of two-dimensional foam is investigated over a range of shear rates with the numerical DySMaL model, which features dynamically deformable bubbles. It is found that at low shear rates, the rheological behavior of the system can be characterized by a yield stress power-law constitutive equation that is consistent with experimental findings and can be understood in terms of soft glassy rheology models. At low shear rates, the system rheology is also found to be subject to a scaling law involving the bubble size, the surface tension, and the viscosity of the carrier fluid. Physics of agarose fluid gels: Rheological properties and microstructure

Agarose, a strongly gelling polysaccharide, is a common ingredient used to optimize the viscoelastic properties of a multitude of food products. Through aggregation of double helices via hydrogen bonds while cooling under quiescent conditions it forms firm and brittle gels. However, this behavior can be altered by manipulating the processing conditions viz shear. A raman spectroscopic determination of the interlamellar forces in crystalline n-alkanes and of the limiting elastic modulus Ec of polyethylene

A simple treatment based on continuum mechanics shows that weak interlamellar forces in crystalline n-alkanes should result in a characteristic upward shift of the frequencies of the longitudinal acoustical (LA) modes, which is independent of the chain length and decreases inversely with the mode order. A raman spectroscopic determination of the LA mode frequencies of a series of different n-alkanes confirms the theoretical conclusion and permits a derivation of a force constant characteristic of the interlamellar forces. Fluid viscoelastic dampers are of great interest in different fields of engineering. Examples of their applications can be found in seismic mitigation design of structures or in vibration absorption in airplane suspension. Such devices introduce a non-linear dissipative term in the equation of motion and therefore, the solution of even a single degree of freedom system excited by a white noise process, becomes prohibitive. On the numerical implementation of a 3D fractional viscoelastic constitutive model

The aim of this paper is the implementation of a 3D fraction al viscoelastic constitutive law in a user material subroutine (UMAT) in the finite element software Abaqus. Essential to the implementation of the model is access to the strain history at each Gauss point of each element in a constructive manner. Details of the UMAT and comparison with some analytical results are presented in order to show that the fractional viscoelastic constitutive law has been successfully implemented.
