In search of the taste of terroir: a challenge sensory science

International audience; The definition of terroir has evolved throughout history, from something clearly negative in the XVIth-XVIIIth century to a complex multi-parametric construct with positive connotations but also with many scientific unknowns. Terroir has always been linked more or less explicitly to the sensory properties of the resulting products. Wine consumers have little access to objective terroir information and even if they had, it would be very difficult for them to interpret in terms of wine quality. Geostatistical computing of acoustic maps in the presence of barriers

2009

Acoustic maps are the main diagnostic tools used by authorities for addressing the growing problem of urban acoustic contamination. Geostatistics models phenomena with spatial variation, but restricted to homogeneous prediction regions. The presence of barriers such as buildings introduces discontinuities in prediction areas. In this paper we investigate how to incorporate information of a geographical nature into the process of geostatistical prediction. In addition, we study the use of a Cost-Based distance to quantify the correlation between locations.

1400 years of man-environment interactions and soil evolution in the Saint-Mont mountain (Remiremont, Vosges)

International audience; The SolHoM(a) project aims at determining the degree of landscape anthropisation in the Fossard massif (Remiremont, Vosges, France) by estimating the impact of past human occupations on current soils. Nowadays, a forest covers this relatively inhospitable mountain (hard climate, steep slopes, acid soils ...), but some remains suggest human presence for at least 1400 years.The Saint-Mont is a variscan orogenic granitic summit (height 672m) with valuable preserved archaeological relics, located south of the Fossard. At the top was founded the monasterium Habendum (from the 7th century to the French Revolution), which potentially comes after a late-antic castrum.Further…

Archéogéographique du bassin versant du Haut Val Suzon

Entre 2003 et 2020, les Bois de Cestres (St Martin-du- Mont) puis le Haut Val Suzon ont fait l’objet d’une enquête archéologique pluridisciplinaire. 26 sites y ont été découverts, dont un en bois de Cestres, a fait l’objet d’une fouille exhaustive. Initiée par Jean Louis Maigrot en 2003-2004, l’enquête a été reprise et conduite par Patrice Beck, professeur d’archéologie et d’histoire médiévale, aidé de Frank Faucher ingénieur au Service Régional de l’Archéologie à Dijon. Carbohydrates in plant immunity and plant protection: roles and potential application as foliar sprays.

International audience; Increasing interest is devoted to carbohydrates for their roles in plant immunity. Some of them are elicitors of plant defenses whereas other ones act as signaling molecules in a manner similar to phytohormones. This review first describes the main classes of carbohydrates associated to plant immunity, their role and mode of action. Identification and quantitation of tocopherols, carotenoids and triglycerides in edible Pistacia lentiscus oil from Tunisia

International audience; The fruits of Pistacia lentiscus are a source of a fixed oil used in some forested areas for culinary purposes and in traditional medicines. The aim of this study was to evaluate the levels of tocopherols, carotenoids and triglycerides in this oil using high-performance liquid chromatography (HPLC). The results demonstrated the presence of two vitamin E isomers; α- and γ-tocopherols, at respective concentrations of 119 mg and 23 mg per kg of oil. β-carotene, lutein and zeaxanthin were the principal carotenoid molecules identified. β-carotene was the main molecule present, with a level of 6.13 mg/kg oil.
