The Off-Flavor of Pea Flour

Pea products are underused as a protein source in human food because of their “beany” flavor. The objective of the study is to select an extraction method being the most representative for the sensory perception of the beany flavor. Solid phase microextraction (SPME) and purge and trap (P&T) extracts were analyzed by GC-MS and the sensory representation of the extracts was assessed by direct gas chromatography-olfactometry (D-GC-O). Extracted compounds were less numerous in SPME extracts than in P&T extracts. Nevertheless, the SPME method was more suitable because of its good representation of the pea suspension odor.
Hydrogen trapping: Synergetic effects of inorganic additives with cobalt Sulfide absorbers and reactivity of cobalt polysulfide

International audience; The biphasic product CoS2 + Co(OH)(2) obtained by oxidation of cobalt sulfide is known to trap hydrogen at room temperature and low pressure according to a balanced reduction equation. Adding various inorganic compounds to this original absorber induces their reduction by hydrogen in the same conditions at a significant rate: (i) excess cobalt hydroxide is reduced to metallic cobalt; (ii) nitrate ions are reduced to ammonia; (iii) sulfur and sodium thiosulfate are reduced to H2S or NaHS and Na2S, respectively. The supercritical water gasification of Nannochloropsis gaditana microalgae has been studied in term of process development at 24 MPa and 663 °C. Gasification has been investigated using a 200 cm3 down flow reactor working continuously. The effect of microalgae slurry concentration, with or without alkali catalysts, was studied. Moreover, the role played by different constituents of microalgae on gasification was investigated. Particularly, gasification of amino acids, carbohydrates and model mixtures among them was studied. A fast and effective method for quantitative determination of fumonisins B1 and B2 (FB1 and FB2) in different cereal-based products was developed. Fumonisins were extracted combining a solid liquid extraction (SLE) pre-treatment and immunoaffinity columns (IACs), which were applied for an effective clean-up. Consecutively, high pressure liquid chromatography (HPLC) coupled to hybrid triple quadrupole-linear ion trap mass spectrometer (QTrap®) was used for the separation, detection and quantification of targeted mycotoxins. Understanding fat, proteins and saliva impact on aroma release from flavoured ice-creams

In vitro aroma release was monitored by solid phase micro-extraction gas chromatography using an innovative saliva reactor, which imitated human chewing under temperature control. Multi‐residue extraction to determine organic pollutants in mussel hemolymph

This study assesses the extraction of eleven pharmaceuticals, five pesticides, five perfluoroalkyl substances, and two illicit drugs in hemolymph from (Mytilus Galloprovincialis). Four extraction procedures using Phree™ Phospholipid Removal cartridges were tested using different volumes of methanol (400 and 600 μL) and acetonitrile (300 and 450 μL). The pollutants were determined by high-performance liquid chromatography–tandem mass spectrometry. The use of methanol gave several problems during the extraction procedure, such as longer times and sample loss. Three methods (acetonitrile 300 and 450 μL; and methanol 600 μL) were validated.
