Impacts of obesity on the oro-sensory perception of lipids in Human

Accumulating evidences support the existence of a fatty acid taste both in rodents and humans. A recent study performed in lean subjects suggests the existence of a positive correlation between the oro-sensory perception of dietary lipids and body mass index (BMI) in Human. It was extrapolated that obesity might promote overconsumption of fatty foods by decreasing the detection of lipids in oral cavity. Plasmalogens in the pathogenesis of glaucomatous optic neuropathy

Neuronal tissues such as the retina contain high amounts of plasmalogens. One of their particularities is to concentrate polyunsaturated fatty acids (PUFA) before releasing them specifically. Several data from our laboratory suggest that plasmalogens are involved in the pathophysiology of primary open angle glaucoma (POAG), the second leading cause of blindness worldwide. The different experiments were carried out on human patients with POAG as well as on rodent models of glaucoma. International audience; The adhesion of methyl ricinoleate droplets to cells of the yeast Yarrowia lipolytica was investigated. A new cytometric method, relying on the double staining of fatty globules with Nile Red and of cells with Calcofluor, enabled us to quantify methyl ricinoleate droplet adhesion to cells precultured on a hydrophilic or on a hydrophobic carbon source. In this last case, droplet adsorption was enhanced and a MATS (microbial adhesion to solvents) test revealed that this increase was due to Lewis acid-base interactions and not to an increase in the hydrophobic properties of the cell surface.
