Effect of energy density on liking and on caloric adjustment conditioning after sweet beverage exposure in children aged 8-11 y

2014

The contribution of sweet beverages to weight gain in children and adolescents is controversial. The present study was conducted to study, in 8-11 year-old children, the influence of energy conditioning on liking and on caloric adjustment after sweet beverages exposure. We also studied the stability of the conditioning effects after a period without exposure and an extinction period. Children (n = 44) were exposed to 2 flavored sweetened beverages: a high energy version (HE: 150kcal) and a no energy version (NE: 0kcal). During a 4-wk conditioning period, children were exposed either 2 or 7 times to each beverage. During a 3-wk stability period children were not exposed to any beverage. Duri…

Rosenbluth separation of the $\pi^0$ Electroproduction Cross Section off the Neutron

2017

We report the first longitudinal/transverse separation of the deeply virtual exclusive $\pi^0$ electroproduction cross section off the neutron and coherent deuteron. The corresponding four structure functions $d\sigma_L/dt$, $d\sigma_T/dt$, $d\sigma_{LT}/dt$ and $d\sigma_{TT}/dt$ are extracted as a function of the momentum transfer to the recoil system at $Q^2$=1.75 GeV$^2$ and $x_B$=0.36. The $ed \to ed\pi^0$ cross sections are found compatible with the small values expected from theoretical models. The $en \to en\pi^0$ cross sections show a dominance from the response to transversely polarized photons, and are in good agreement with calculations based on the transversity GPDs of the nucle…

Sodium Chloride and Magnesium Chloride affected by Ripening of Camembert Cheese

1993

Ripening of cheese with three kinds of salt treatment was studied using MgCl 2 , NaCl or a mixture of the two. Proteolysis was followed by determination of TCA-soluble nitrogen and quantitative electrophoresis. A rapid one-step method for free fatty acids was used to determine short and long-chin fatty acids. In the presence of magnesium, proteolysis increased, even with NaCl, which seemed to delay the magnesium activation. Lipolysis was retarded by NaCl, which decreased the level of free fatty acids. An imbalance between proteolysis and lipolysis could be responsible for the unpleasant flavor of the cheese containing both MgCl 2 and NaCl

How amniotic fluid shapes early odor-guided responses to colostrum and milk (and more)

2016

Revue; Among the multiple transitions that characterize mammalian development, birth certainly is the most abrupt and spectacular. It is also the most challenging for newborns when one considers their high mortality rates in any mammalian species. Although evolution has selected newborn organisms that possess the physiological and behavioral keys leading to adapt to this harsh psychobiological challenge, their capabilities cannot be considered separately from the maternal organism and the environment she creates. Mammalian females provide indeed passive (physiological) and/or active (behavioral) assistance to complement and boost their offspring’s capacities. One notable strategy of mammali…

Improved measurement of $^8$B solar neutrinos with $1.5  kt·y$ of Borexino exposure

2017

We report on an improved measurement of the $^8$B solar neutrino interaction rate with the Borexino experiment at the Laboratori Nazionali del Gran Sasso. Neutrinos are detected via their elastic scattering on electrons in a large volume of liquid scintillator. The measured rate of scattered electrons above 3 MeV of energy is $0.223\substack{+0.015 \\ -0.016}\,(stat)\,\substack{+0.006 \\ -0.006}\,(syst)$ cpd/100 t, which corresponds to an observed solar neutrino flux assuming no neutrino flavor conversion of $\Phi\substack{\rm ES \\ ^8\rm B}=2.57\substack{+0.17 \\ -0.18}(stat)\substack{+0.07\\ -0.07}(syst)\times$10$^6$ cm$^{-2}\,$s$^{-1}$. This measurement exploits the active volume of the …

Open-source QCD analysis of nuclear parton distribution functions at NLO and NNLO

2019

We present new sets of nuclear parton distribution functions (nPDFs) at next-to-leading order (NLO) and next-to-next-to-leading order (NNLO). Our analyses are based on deeply inelastic scattering data with charged-lepton and neutrino beams on nuclear targets. In addition, a set of proton baseline PDFs is fitted within the same framework with the same theoretical assumptions. The results of this global QCD analysis are compared to existing nPDF sets and to the fitted cross sections. Also, the uncertainties resulting from the limited constraining power of the included experimental data are presented. The published work is based on an open-source tool, xFitter, which has been modified to be ap…

Impact of Ageing on Pea Protein Volatile Compounds and Correlation with Odor

2022

Vegetal proteins are of high interest for their many positive aspects, but their ‘beany’ off-flavor is still limiting the consumer’s acceptance. The aim of this work was to investigate the conservation of pea protein isolate (PPI) during time and especially the evolution of their organoleptic quality under two storage conditions. The evolution of the volatile compounds, the odor and the color of a PPI has been investigated during one year of storage. PPI was exposed to two treatments mimicking a lack of control of storage conditions: treatment A with light exposition at ambient temperature (A—Light 20 °C) and treatment B in the dark but with a higher temperature …

Physico-chemical characterisation of a non-conventional food protein source from earthworms and sensory impact in arepas

2009

International audience; This study aimed to characterise a non-conventional protein source: a powder made from earthworms, and to evaluate its potential use as human food. The way it was prepared led to low solubility and wide particle size distribution. Sensory analysis was used to assess the acceptability and the organoleptic properties of maize-based pan-cakes fortified with this novel protein powder. Satisfying products were obtained with a substitution level of 5.5% (w/w) earthworm powder in pan-cakes. GC-MS allowed the identification of more than seventy volatile compounds that may be responsible for the off-odour of the powder. The most abundant chemical groups found in the volatile …

Azimuthal Anisotropy of Heavy-Flavor Decay Electrons in p-Pb Collisions at √sNN = 5.02 TeV

2019

Angular correlations between heavy-flavor decay electrons and charged particles at midrapidity (|η|<0.8) are measured in p-Pb collisions at √sNN=5.02  TeV. The analysis is carried out for the 0%–20% (high) and 60%–100% (low) multiplicity ranges. The jet contribution in the correlation distribution from high-multiplicity events is removed by subtracting the distribution from low-multiplicity events. An azimuthal modulation remains after removing the jet contribution, similar to previous observations in two-particle angular correlation measurements for light-flavor hadrons. A Fourier decomposition of the modulation results in a positive second-order coefficient (v2) for heavy-flavor decay ele…
