In order to enhance the consumption of bitter and strong tasting vegetables such as cabbages and root vegetables, it is required to identify potential mediators of sociodemographic–diet relationships. Food is an effective symbol capable of strongly evoking a cultural identity. In the case of Sicily, this role is mainly played by pastry, and in particular by two sweets: cannolo (the singular of cannoli) and cassata. But how does it happen that just these two preparations, rather than others, take on this value? What are their meanings and what determines them? Are cannolo and cassata the expression of a remote and spontaneous tradition as we generally like to believe? Semiotic analysis not only leads us to understand the complexity of these two pieces of a gastronomy, but also to reflect on the whole notion of symbol, rethinking its limits and possibilities.

Minerality in wines: mental expectations of Swiss and French consumers

Today the concept of minerality in wines is omnipresent. It appears in marketing discourses, in oenological critics and commercial communication. However, there is no common agreement on a general definition. This paper aims to study the different expectations that Swiss and French consumers have about minerality. The multidimensionality of the term is reflected through stereotypes like the odor of flint, the impression of "sucking a stone", or referring to acidity or to the Terroir. Thus, the term minerality appears as a unstable concept and providing a precise definition remains consequently difficult for many consumers.
Agricultural potential of anaerobically digested industrial orange waste with and without aerobic posttreatment

The potential of anaerobically digested orange waste with (AAD) and without (AD) aerobic post-treatment for use in agriculture was evaluated through chemical analyses, short-term phytotoxicity and long-term plant assays. Chemical analyses showed that AD contained ammonia and organic acids, and aerobic post-treatment did not significantly remove these phytotoxins. The N:P2O5:K2O ratio in AD was 1:0.26:0.96 and aerobic post-treatment did not change the composition in AAD except for K2O (1:0.26:1.24). Does corn market uncertainty impact the US ethanol prices?

The growing interest in biofuel as a green energy source has intensified the linkages between corn and ethanol markets, especially in the United States that represents the largest producing and exporting country for ethanol in the world. In this study, we examine the effect of corn market uncertainty on the price changes of US ethanol applying a set of GARCH-jump models. We find that the US ethanol price changes react positively to the corn market volatility shocks after controlling for the effect of oil price uncertainty.
