Effect of addition of Opuntia ficus-indica mucilage on the biological leavening, physical, nutritional, antioxidant and sensory aspects of bread

The addition of active compounds to enhance the functional properties of foods is a quite common practice. Recently, bread became one of the target foods to incorporate functional ingredients such as those deriving from Opuntia spp. So far, only Opuntia ficus-indica cladodes in powder has been tested. The addition of fresh O. ficus-indica mucilage (in substitution to water) did not influence the biological leavening of the doughs. The resulting breads showed a biological role of the cactus mucilage, because their antioxidant activity was higher than that of control wheat bread. Fig fruits are usually highly sensitive to some physiopathological disorders during post-harvest life, such as softening and skin cracking. Indeed, the use of edible coating (EC) has been evaluated in several fruit crops to reduce fruit post-harvest transpiration and to maintain fruit visual quality. Evaluation of some growth regulator effects on encapsulated in vitro-derived microcuttings of three Italian Ficus carica L. genotypes.

In this study, the encapsulation technology based on the calcium alginate coating was applied to some Ficus carica L. genotypes. Uninodal microcuttings (3-4 mm long), excised from in vitro proliferating shoots of three Italian cultivars (‘Bifera’, ‘Palazzo’ and ‘Catalanisca’), were employed. The influence of three different plant growth regulators (PGRs): 6-benzylaminopurine (BAP), meta-topolin (MT) and zeatine (ZEA), added to the artificial endosperm, were evaluated. Genetic diversity of fig (Ficus caricaL.) genotypes grown in Southern Italy revealed by the use of SSR markers

The genetic variability among 181 fig (Ficus carica L.) accessions found in small farms located in Campania, Basilicata, Apulia, Calabria and Sicily was investigated analysing the polymorphism of 18 simple sequence repeat (SSR) markers. The SSR analysis revealed a large genetic diversity among accessions. A total of 117 alleles were detected with a mean of 6.5 locus-1. The average expected (He) and observed heterozygosity (Ho) were 0.56 and 0.66, respectively.
