Dimensions of household food waste focused on family and consumers

2020

Food waste produced in homes represents the largest fraction of food waste generated along the food chain. Therefore, adequate prevention measures based on the quantitative and qualitative dimensions of the problem need to be put in place to reduce waste. The objective of the review was to identify areas of interest in relation to the food waste in households, considering the family unit as a whole as well as individual family members. Quantifying the problem is an important aspect in order to know its scope and dimension, but prevention also involves knowing the causes in a home. This is a complex issue, which, on a family level, is related to socioeconomic status, educational level, compo…

The food industry produces significant amounts of waste, many of them rich in valuable compounds that could be recovered and reused in the framework of circular economy. The development of sustainable and cost-effective technologies to recover these value added compounds will contribute to a significant decrease of the environmental footprint and economic burden of this industry sector. Towards a more sustainable food Supply chain: opening up invisible waste in food service

2016

Future challenges to the global food supply chain are complex. In order to embrace sustainability, companies should change their management practices towards more efficient resource use. Food waste being a misuse of resources, we identify its causes and possible ways of minimising it. To achieve this goal, we conducted explorative research with qualitative and quantitative data through in-depth semi-structured interviews and an open questionnaire with top Spanish food service companies. Results show that most businesses mainly tend to minimise food waste according to economic criteria, without taking into account the social, ethical or environmental factors. As a consequence, just “visible”…

Strategies to achieve a healthy and balanced diet: fruits and vegetables as a natural source of bioactive compounds

2020

Abstract The main world health problems are obesity and chronic diseases such as diabetes, cancer, and cardiovascular problems. They are etiologically linked with the reduced consumption of fruits and vegetables and increased intake of salt, fats from animal origins, trans fatty acids, sugars, and sugary beverages. Various strategies for educating the public tend to promote the increased consumption of bioactives from fruits and vegetables and dieting, while creating affordable and nutritious foods from sustainable raw materials. These strategies include educating the public about dietary tools and the industrial use of advanced nonthermal food processing and production technologies from re…

Hunger and Food Charity in Rich Societies: What Hope for the Right to Food?

2014

First World Hunger: Food Security and Welfare Politics (Riches, 1997a) offered the first cross-national study of the emergence and entrenchment of food aid and charitable food banking from the early 1980s to the mid-1990s. It consists of five case studies from advanced industrial countries with developed ‘liberal’ welfare states: Australia, Canada, New Zealand, the UK and the USA. All of the countries were food exporters and food secure through national production and imports, suggesting that domestic hunger could not be caused by the failure to provide sufficient food and nutrition, but rather was a matter of distributional justice and human rights — that is a fundamentally political issue.

Emerging macroscopic pretreatment

2021

Macroscopic pretreatment of food waste aims at the preparation of the food matrix for subsequent processing and recovery steps. The preparatory steps involve the adjustment of the phase content and properties (water, solid, fats content), the moderation of enzyme activity as well as prevention and control of any microbial growth (Galanakis, 2012; Galanakis et al., 2010a). In recent times, several emerging technologies have been researched, developed, and/or adapted from other fields for drying, sterilization, enzyme inactivation, and enhancing mass transfer in food and biomaterials. This chapter focuses on these upcoming technologies with potential applications to food waste recovery and in…

Valorization of waste and by-products from food industries through the use of innovative technologies

2020

Abstract Food waste and by-products, which are normally regarded as not being valuable, have great potential for valuable compounds production. Valorization of these materials not only means more nutrients or bioactive compounds, but also addresses environmental issues caused by discarding these “waste” materials. This chapter discusses the nutritive and economic potential of food waste and by-products, as well as the application of innovative technologies (i.e., electrotechnologies, ultrasound, high hydrostatic pressure, nanotechnology, pressurized fluids) in food waste and by-products valorization. Such technologies improve the perspectives regarding waste utilization, paving the ways tow…

Coffee biowaste valorization within circular economy: an evaluation method of spent coffee grounds potentials for mortar production

2021

Abstract Purpose Spent coffee grounds (SCG) are biowastes extensively generated within the coffee supply chain. Nowadays, their disposal represents an increasing environmental concern due to its toxicity and organic nature. With the estimated increase of coffee production and consumption in the upcoming years, there is an imperative need to find a proper reverse option, along with a novel industrial application, which allows for the valorization of this coffee by-product within a circular economy perspective. This study aims at investigating a potential reuse of spent coffee grounds to produce novel construction materials to be used for sustainable buildings. Methods After having illustrate…
