: This chapter will review the different synthetic pathways of bread volatiles in conventional white bread. The influence of traditional and innovative raw materials and breadmaking processes on the formation of volatiles will then be discussed. Next, extraction and analytical methods used to identify volatiles that participate in bread aroma will be presented. Volatiles that have been identified in freshly baked white bread will be listed and the ones that are potent odorants highlighted. Finally, the techniques employed by the baking industry to enhance bread aroma will be described.

The relationship between copper accumulated in vineyard calcareous soils and soil organic matter and iron

Summary The intensive use for over 100 years of copper sulphate (Bordeaux mixture) to fight mildew in vineyards has led to a substantial accumulation of copper (Cu) in surface soils. To assess the effects of such large concentrations, the surface soils of 10 Burgundy vineyards were sampled and analysed for total organic matter (carbon and nitrogen) and metal (copper and iron) contents. Untargeted metabolomics to explore the oxidation processes during shelf life of pork patties treated with guarana seed extracts

The changes of metabolites in pork patties with different antioxidants added (control without antioxidants, 200 mg kg(-1) butylated hydroxytoluene (BHT) and 250 mg kg(-1) guarana seed extracts (GSEs)) under modified atmosphere (80% O-2 and 20% CO2) for 18 days of refrigerated storage were evaluated. Untargeted metabolomic approach based on UHPLC-ESI-QTOF-MS analysis was applied. Nutrient inputs into ecosystems of the tropical mountain rainforest region are projected to further increase in the next decades. To investigate whether important ecosystem services such as nutrient cycling and matter turnover in native forests and pasture ecosystems show different patterns of response, two nutrient addition experiments have been established: NUMEX in the forest and FERPAST at the pasture.
