International audience; The release of a strawberry aroma from different composite gels taken as models of fruit preparations and from a sucrose solution was investigated. The composition of the model systems differed with regard to the gelling agent, either pectin or carrageenan, and to the rigidity of the gel. With the use of atmospheric pressure chemical ionization−mass spectrometry, the release profiles of the aroma compounds were determined under stirring. Heterogeneous Displacement Effects of Migrant Labor Supply – Quasi-Experimental Evidence From Germany

We provide estimates of the effect of migrant labor supply on resident employment. We exploit variation in the number of asylum seekers eligible to the suspension of a major hiring restriction implemented in a subset of German counties. Our difference-in-difference design allows us to provide evidence from a labor supply shock of migrants on local markets net of their additional spending at arrival that might mask labor market displacement effects. Despite this, we do not find a negative effect on employment growth of natives but only on other foreign residents. This also holds for unskilled employees. The Schroeder paradox or how the state of water affects the moisture transfer through edible films

The objective of this work was to better understand the water permeation through edible films when water is either in its vapour or in its liquid state related to their physico-chemical properties. Film based on iota-carrageenans or sodium alginate, containing or not fat, and encapsulating or not an aroma compound (n-hexanal) have been prepared. Films were conditioned at three different relative humidities, 0%, 43% and 84%. The incorporation of the n-hexanal in both types of biopolymer modifies the mechanical properties of film matrix and has a synergistic effect when associated to fat. A Multi-Component Reaction towards the Development of Highly Modular Hydrogelators

Herein we report a multi‐component reaction approach for the development of a new class of hydrogelators based on the OxoTriphenylHexanOate (OTHO) backbone. A focused library of OTHOs has been synthesized and their hydrogelation features evaluated. The two most potent hydrogelators were studied by rheology revealing different stiffness, appearances and thixotropic behavior of the gels. The new gelators showcase the versatility of the OTHO backbone as a platform for the design of functionalized hydrogels with tunable gel properties. peerReviewed
