Due to the increasing incidence of gluten intolerance, researchers are focusing on finding ways to eliminate immunotoxicity of wheat, this would allow the use of wheat products for gluten-intolerant consumers. The article reviews recent studies on biotechnological methods to eliminate and reduce the immunogenicity of wheat products. So far, many gluten removal methods have been proposed, but their efficacy levels were quite different. The aim of this study was to evaluate the bioavailability of zinc from infant foods (adapted, follow-up and toddler milk-based formulas and fruit juices containing milk and cereals, FMC) using solubility, dialyzability and a model combining simulated gastrointestinal digestion and zinc uptake and transport by Caco-2 cells. The greater solubility of zinc from infant formulas compared with fruit juices (FMC) could be due to the greater casein phosphopeptide content resulting from casein hydrolysis. Available Lysine in Protein, Assay Using o-Phthalaldehyde/ N-Acetyl-L-cysteine Spectrophotometric Method

An assay was based on reaction of free e-amino groups in proteins with the o-phthalaldehyde/N-acetyl-L-cysteine reagent to form isoindoles, which absorb at 335 nm. The procedure was suitable for proteins or mixtures of proteins with available lysine contents of more than 5 moles lysine/mole protein and required absence of free amino acids and peptides. This method was simpler and more convenient than other methods, since it did not require hydrolysis, amino acid analysis, long heating periods or solvent extraction.
Effect of storage on quality parameters and phenolic content of Italian extra-virgin olive oils

The quality of extra virgin olive oils is affected mainly by hydrolytic and oxidative reactions. The present paper investigated the changes of major and minor components and oxidation indices of three monovarietal extra virgin olive oils after 18 months of storage at room temperature and in dark glass bottles conditions. After storage, the basic quality parameters such as free acidity, peroxide values, extinction coefficients, fatty acids composition, chlorophyll and carotenoid content, did not exceed the upper limits set by European Community Regulations for extra-virgin olive oils. Synthesis of rigid ethynyl-bridged polytopic picolinate ligands for MOF applications

Abstract Segmented homopolytopic ligands that consist of a rigid central arylene platform, ethynylene spacers, and terminal chelating picolinate subunits have been synthesized in good yields in a two-step procedure involving a Sonogashira-type cross coupling reaction between the ester methyl 5-bromopyridine-2-carboxylate and several arylacetylenes, followed by hydrolysis of the resulting methyl picolinates. A similar strategy has been employed for the preparation of heteroditopic ligands containing picolinate and a second non-chelating pyridine or benzoate unit. The compounds are potential candidates for organic linkers in metal–organic frameworks (MOFs).

ABSTRACTA synthetic route to highly luminescent organic semiconductors with curable alkoxysilyl groups is described. Monodisperse oligo(phenylenevinylene)s are rigidly connected to di- and triethoxysilanes via Heck reactions or via cross-metathesis. Hydrolysis of the silicic esters yields silanols condensing to linear and cyclic oligo-OPV-siloxanes or to three-dimensional networks, thus allowing the transformation of small molecules to fluorescent materials with well-defined chromophores. Transparent films are obtained by casting of soluble cyclosiloxanes and from OPV-silanetriols, the latter can be cured to insoluble networks.

The proteolytic susceptibility of the native CO 2 -fixing photosynthetic enzyme ribulose 1,5-bisphosphate carboxylase/oxygenase (EC 4.1.1.39, Rubisco) has been shown to increase in vitro after oxidative treatments that affect cysteine thiols. A limited incubation of oxidized (pretreated with the disulfide cystamine) Rubisco from Chlamydomonas reinhardtii with subtilisin or proteinase K generated fragments of molecular mass about 53 kDa (band I in SDS-PAGE) and 47 kDa (band II) derived from the large subunit (55 kDa) of the enzyme. Increased susceptibility of ribulose-1,5-bisphosphate carboxylase/oxygenase to proteolytic degradation caused by oxidative treatments

The susceptibility of the chloroplastic enzyme ribulose-1,5-bisphosphate carboxylase/oxygenase to proteolysis by trypsin, chymotrypsin, proteinase K, and papain is enhanced by oxidative treatments including spontaneous oxidation of cysteines. Proteinases exhibit a high specificity for the oxidized inactive form of the carboxylase, cleaving its large subunit. Treatment of the inactive enzyme with dithiothreitol results in partial recovery of both carboxylase activity and resistance to proteolysis. This behavior may explain the specific degradation of ribulose-1,5-bisphosphate carboxylase/oxygenase that occurs in vivo during leaf senescence.
