Deep-fat frying is a cooking technique that has been used continuously since prehistoric times. A domestic deep-fryer heated from the bottom develops significant convection inside the bath cavity. It is responsible for very high heat transfer coefficients and the exposure of the deep-frying oil to the atmospheric oxygen. The continuous conversion of gaseous dioxygen into unstable and reactive hydroperoxides and their subsequent advection throughout the bulk volume is at the origin of the main complaints made of frying which includes issues such as odors, fouling, and generation of several toxic compounds. Influence of Skin Depth on Convective Heat Transfer in Induction Heating

International audience; We investigate convection driven by induction heating of a horizontal fluid layer using direct numerical simulations (DNS). This problem is of particular interest in the context of nuclear severe accident mastering. In a real severe accident, the molten core is subjected to homogeneous internal sources resulting from nuclear disintegrations. This situation is mimicked in the laboratory using induction heating as the internal source. In induction heating, however, heat sources are localized in the skin layer. Controlling melt convection—an innovation potential for concerted microstructure evolution of Nd-Fe-B alloys

The solidification process and the resulting microstructure of Nd-Fe-B alloys in consideration of melt convection has been investigated experimentally with a specially designed forced crucible rotation technique. Samples were subjected to well-defined forced rotation and vibration, respectively, during induction heating and solidification. A concerted microstructure evolution is possible by enhancement or suppression of the melt convection. The onset of convection in an inclined porous layer which is heated internally by a uniform distribution of heat sources is considered. We investigate the combined effects of inclination, anisotropy and internal heat generation on the linear instability of the basic parallel flow. Contactless magnetic excitation of acoustic cavitation in liquid metals

A steady axial magnetic field is applied to a liquid metal zone heated by induction currents. The resulting alternating Lorentz force causes pressure oscillations that being strong enough lead to cavitation in the molten metal. Amplitude of the pressure oscillations is proportional to the product of the induced currents and the steady axial magnetic field induction. We follow an approach where the acoustic pressure is maximized by the induction currents. The onset of cavitation is identified by the occurrence of sub-harmonics of the drive frequency in sound recorded at the surface of the experimental cell. Structural properties of magnesium stearate pseudopolymorphs: effect of temperature.

A thorough review of the relevant literature reveals that the interaction between water vapour and magnesium stearate, in contrast to many other metal soaps, is not properly understood. The structural modifications associated with the up-take or loss of water of vegetable-derived commercial magnesium stearate powders exposed to humid air or vacuum at room temperature are investigated using standard powder X-ray diffractometry.
