The concentrations of the redox pair hydrogen peroxide (H2O2) and oxygen (O2) can promote or decelerate the progression and duration of the wound healing process. Although H2O2 can reach critically high concentrations and prohibit healing, a sufficient O2 inflow to the wound is commonly desired. Vinyl acetate (an ester of vinyl alcohol and acetic acid) is a representative of volatile organic compounds (VOCs) in decomposition, of which hydrolyses and oxidoreductases are mainly involved. Background The aim of this study was to evaluate the influence of waiting time between the bleaching with 35% hydrogen peroxide and orthodontic brackets bonding on shear bond strength (SBS) in enamel. The effect of pH and nitrite concentration on the activity of the nitrite oxidizing bacteria (NOB) in an activated sludge reactor has been determined by means of laboratory batch experiments based on respirometric techniques. The bacterial activity was measured at different pH and at different total nitrite concentrations (TNO 2). The experimental results showed that the nitrite oxidation rate (NOR) depends on the TNO 2 concentration independently of the free nitrous acid (FNA) concentration, so FNA cannot be considered as the real substrate for NOB. Abstract We report a study on the thermal behaviour of the infrared Water Association Band (WAB) in dry binary saccharide–water systems (containing trehalose, sucrose, maltose, and raffinose). This is a follow-up of preceding studies on analogous carboxymyoglobin-saccharide–water ternary systems, which pointed out a mutual protein-matrix influence (coupling). A comparison between binary and ternary systems, for all the saccharides studied, evidences a reduction in the residual water content in the latter and, except for trehalose, a sizable modification in the thermal behaviour, which is discussed in terms of structure and hydrogen bonding properties of the sugars. Validation of a predictive model for the growth of chalk yeasts on bread.

The present study focused on the effects of temperature, T, and water activity, aw, on the growth of Hyphopichia burtonii, Pichia anomala, and Saccharomycopsis fibuligera on Sabouraud Agar Medium. Cardinal values were estimated by means of cardinal models with inflection. All the yeasts were xerophilic, and they exhibited growth at 0.85 aw. The combined effects of T, aw, and pH on the growth of these species were described by the gamma-concept and validated on bread in the range of 15-25 °C, 0.91-0.97 aw, and pH 4.6-6.8.
