CNV represents an important source of genetic variability that provides genomics structural information complementary to the single nucleotide polymorphism (SNP) data. Effect of muscle type and animal category on fatty acid composition of bresaola made from meat of Cinisara cattle: preliminary investigation

The bresaola could represent an alternative commercial opportunity for autochthonous dairy cattle farms. Therefore, a study was carried out to investigate the fatty acid (FA) composition of bresaola made using Semimembranosus (SMm), Semitendinosus (STm), and Biceps brachii (BBm) muscles from grazing young bulls (GB), housed young bulls (HB) or grazing adult cows (AC) of Cinisara breed. Animal category, fat content, feeding system, and type of muscle influenced the FA composition of bresaola. It is well known that β-lactoglobulin (LGB) and k-casein (CSN3) alleles affect milk cheese making properties. The purpose of this study was to analyse the A and B allele distribution at the LGB and CSN3 loci in Cinisara breed and their influence on milk and cheese making production traits. The Cinisara is a Sicilian breed which, according to DAD-IS database (FAO), consists of about 5,000 individuals and is reared mainly for milk production which is usually transformed into Caciocavallo Palermitano, a typical stretched-curd cheese. The Cinisara cow is a dairy Sicilian autochthonous breed, reared in the western part of the isle according to the traditional livestock system, based on grazing natural pastures. Effect of CSN1S1 G allele on some characteristics of milk produced by Cinisara cows

In bovine milk about 37-40% of total casein is represented by s1-casein. The CSN1S1 G allele is characterised by a less efficient protein synthesis (about 40%) compared with the other known alleles because of the insertion, in the 19th exon, of a Long Interspersed Nuclear Element relict responsible for a reduced mRNA stability. The lower proportion of s1-casein in milk is associated with faster formation, higher firmness and greater resistance to compression of the curd. Il saggio affronta il tema del ruolo della colpa nella responsabilità contrattuale e sottopone a revisione critica le correnti favorevoli a individuare nella colpa il fondamento della responsabilità, sia mediante la teoria della presunzione di colpa sia mediante la formulazione della causa di esonero della responsabilità incentrata sulla colpa. All’esito dell’analisi, l’autore conviene con quelle opinioni che alla colpa in senso tecnico assegnano l’esclusiva funzione di criterio di imputazione – peraltro neppure unico come le ipotesi di responsabilità ex recepto testimoniano – della causa dell’impossibilità sopravvenuta della prestazione. Il saggio propone una riflessione sull’uso della responsabilità civile per fronteggiare i danni da covid 19, interrogandosi sul ruolo che, nel contesto di danni di massa, può di fatto rivestire l’istituto, le sue funzioni ed i suoi limiti. Muovendo dall’analisi dei criteri che presiedono alla formulazione del giudizio di responsabilità, l’autore si sofferma, in particolare, sulla clausola dell’ingiustizia, quale snodo centrale per l’affermazione di una responsabilità civile.
