Influence of flavour transfer between different gel phases on perceived aroma

International audience; Multiphasic models of stirred fruit yoghurts made from a bilayer that consisted of a pectin and a dairy gel were developed in order to study the transfer of strawberry flavour compounds between the two phases. Several parameters (i.e., the flavour concentration, the fat content of the dairy gel and the storage temperature) affecting flavour compound transfer, using an experimental design, together with their effect on sensory perception were investigated. Retention/release equilibrium of aroma compounds in fat-free dairy gels

BACKGROUND: The replacement of fat by thickeners in fat-free yoghurts leads to an important modification of aroma compound partitioning, with an impact on aroma perception. Investigation of retention/release equilibria allows a good understanding of aroma compound behaviour depending on food composition. Although the idea of action simulation is nowadays popular in cognitive science, neuroscience and robotics, many aspects of the simulative processes remain unclear from empirical, computational, and neural perspectives. This study considers developing numerical solution techniques for the computer simulations of time-harmonic fluid-structure interaction between acoustic and elastic waves. The focus is on the efficiency of an iterative solution method based on a controllability approach and spectral elements. Results coming from rheological analysis clearly suggest that in SEBS-g-MA-based nanocomposites, containing high amount of o-LDH, the formation of strong interactions between the dispersed nanoparticles and maleic functionalities of matrix occurs. A significant modification of the rheological behaviour can be noticed due to the formation of gel-like structures.
