Flavour & saliva interaction – a brief overview
2015
Saliva is a highly complex body fluid composed of many proteins, peptides, small organic molecules and ions. Saliva is secreted at rest and during eating by major and minor salivary glands. Resting saliva is continuously bathing our oral cavity and as such stimulates our taste receptors playing thus a role in taste sensitivity against some active taste substances. Beside, during eating, foods are chewed and a significant level of stimulated saliva is rapidly incorporated in the bolus. This in-mouth phenomena impact on flavor release and thus perception through saliva-food physical interactions but also through the action of biological compounds (enzymes mainly) against the food matrix. Sali…
Taste perception: from molecule to eating behaviour
2020
The sense of taste has a role in human nutrition, it help to orient our food choices and avoid the ingestion of toxi compounds. Advances in molecular biology, cell biology an, biochemistry were used to identify and characterize the main taste receptors. The identification of these receptors allow a better understanding of the physiological processes tha govern taste perception. The presence of genetic polymorphisr in these receptors explains interindividual differences in tast perception.
Addressing Complexity in Science|Environment|Health Pedagogy
2019
This paper aims to discuss complexity as a key feature for understanding the role of science knowledge in environmental and health contexts—a central issue in Science|Environment|Health pedagogy. Complex systems are, in principle, not predictable. In different contexts, ephemeral mechanisms produce different, sometimes completely unexpected results. The art of decision-making in complex contexts is to take scientific knowledge into account but to interpret its meaning in terms of concrete complex contexts. This is illustrated by four empirical studies on Science|Environment|Health issues, presented midway through this paper. The findings underscore the importance of introducing complexity i…
Teachers’ Identity Tensions and Related Coping Strategies : Interaction With the Career Stages and Socio-Political Context
2022
When external requirements conflict with teachers’ personal beliefs and values, the resulting internal struggles can lead to identity tensions. Contributing to discussion on teachers’ identity development in a challenging context, this study investigated teacher identity tensions and related coping strategies in Hong Kong. We conducted 21 semi-structured interviews with qualified teachers and then performed a deductive thematic analysis of the data. We categorised the identity tensions as positioned on the micro or macro level, and distinguished the coping strategies as emotion-focused or problem-focused behaviours. The identity tensions and related coping strategies seemed to be associated…
Metáforas visuales en los mundos virtuales. El caso de NANEC 2010/11
2011
SMS Messages in a Daily Finnish Newspaper : The Contect of Proverb Performances
2016
The article focuses on Finnish proverbs as a part of contemporary colloquial written language in everyday use and context. Child socioemotional behavior and adult temperament as predictors of physical activity and sedentary behavior in late adulthood
2023
Background Most studies investigating the association of temperament with physical activity and sedentary behavior have examined children or adolescents, employed cross-sectional or longitudinal designs that do not extend from childhood into adulthood, and utilized self- or parent-reported data on physical activity and sedentary behavior. This longitudinal study investigated whether socioemotional behavior in childhood and temperament in middle adulthood predict accelerometer-measured physical activity and sedentary behavior in late adulthood. Methods This study was based on the Jyväskylä Longitudinal Study of Personality and Social Development (JYLS). Socioemotional behavior (behavioral ac…
University Students’ Approaches to Making the Most of Their Study Time

The results of a discursive analysis of students’ positionings reveal three discursive positions that represent of a variety in students’ approaches to make sense of the t…
Anticipation as Platform Power : The Temporal Structuring of Digital Everyday Life
2023
This article explores anticipation as a temporal structure in digital platforms. It contributes to the growing research of platformisation of everyday life by focusing on temporality as a central dimension of platform power, a key mechanism tying participants by structuring intimacies, socialities, and relations that platforms enable and engender. The article shows how the temporality of foreboding, prospecting and speculating about one’s own and other’s social media presence and actions permeates the user experience. Studying media diaries and interviews with participants from different social and occupational groups (politicians, actors, the unemployed, undocumented migrants), the article…
