Abstract Ghost crabs, Ocypode cordimanus, inhabit relatively hostile environments subject to thermal fluctuations, including both diurnal and seasonal cycles. For many ectotherms, including ghost crabs, a major challenge is to remain cool during hot daytime temperatures. This can be achieved by adopting a fossorial lifestyle, taking advantage of thermal refuge afforded by burrows of sufficient depth. Another consideration, often overlooked, is the potential advantage associated with ready access to a thermal energy source (a “charging station”) when surface temperatures are cooler. Gamma Irradiation and Fermentation

This chapter discusses the applications of gamma irradiation technology for food safety, its nutritional implications, and its involvement in fermentation processes. Gamma irradiation has become an alternative technology for food sterilization due to its nonthermal character, thus replacing the conventional heating processes. Several driving forces are propelling the need of γ-irradiation forward for food applications. Besides food preservation, γ-irradiation is taking place for novel applications, especially involving the enhancement of food fermentation processes, by directly irradiating the medium, or generating performant genetically modified strains.
Antioxidant activity and enzymes inhibitory properties of several extracts from two Moroccan Asteraceae species

Abstract The present work reports investigation on phenolic compounds, antioxidant activity and enzyme inhibitory activities (acetylcholinesterase, butyrylcholinesterase, tyrosinase, α-amylase and α-glucosidase) of different extracts from two Moroccan Asteraceae species; Bubonium imbricatum Cav. and Cladanthus arabicus (L.) Cass. B. imbricatum extracts contained the highest amounts of phenolics and flavonoids, and also exhibited higher antioxidant activity. Intensive fishing that selects for large and old individuals can have pervasive effects on traits directly associated with the fecundity and survival of the target species. The observed reduction in fish body size can result in earlier sexual maturity at a smaller body size, leading to a lower individual reproductive output and population productivity in the long term. In addition, increased predation can induce similar responses in age and size at maturity due to the release of intraspecific competition and the lower population density. Fish are known for their high phenotypic plasticity in life-history traits in relation to environmental variability, and this is particularly pronounced among salmonids in the Northern Hemisphere. Resource limitation leads to trade-offs in phenotypic plasticity between life-history traits related to the reproduction, growth, and survival of individual fish, which have consequences for the age and size distributions of populations, as well as their dynamics and productivity. Screening of durum wheat landraces (Triticum turgidum subsp. durum) for the malting suitability

Abstract Durum (T. turgidum subsp. durum) wheat production worldwide is substantially less than that of common wheat (Triticum aestivum) mainly due to the relatively limited end-users. In order to evaluate malting and brewing suitability, sixteen old durum wheat landraces were malted at micro scale. Results show malt quality parameters in the range 78.2–85.9% for the extract, 72.9–80.9% for the fermentability, 3–5 EBC units for the colour, 0.49–0.79% dm for water-extractable arabinoxylans and 0.043–0.059% dm for the β-glucans. The Effects of Different High-Protein Low-Carbohydrates Proprietary Foods on Blood Sugar in Healthy Subjects.

The aim of this study was to analyze the effects on blood sugar concentrations through the calculation of the glycemic score (GS) of 10 different high-protein low-carbohydrates (CHOs) proprietary foods that are commonly used as meals during very low-CHO ketogenic diets or during low-CHO diets. Fourteen healthy females were tested for their glycemic response curve elicited by 1000 kJ of glucose three times within a 3-week period (one test each week) compared with one of 10 test foods once on separate days twice a week.
