Determination of taste-active compounds of a bitter camembert cheese by omission tests

The taste-active compounds of a Camembert cheese selected for its intense bitterness defect were investigated. The water-soluble fraction (WSE) was extracted with pure water and fractionated by successive tangential ultrafiltrations and nanofiltration. The physicochemical assessment of these fractions led to the construction of a model WSE which was compared by sensory evaluation to the crude water-soluble extract, using a panel of 16 trained tasters. As no significant difference was perceived, this model WSE was then used directly or mixed with other cheese components for omission tests. Summary - In cheese, flavour and taste are, in great part, generated by the starters during the ripening stage. Proteolysis and lipolysis are the first steps of the elaboration of a large number of taste and odour compounds directly invol ved in the sensory quality of cheeses. The pathways used by the microorganisms to produce flavour compounds are still unclear in many cases. The paper analyses the budget of the seven French trade union confederations (CGT, CFDT, FO, CFTC, CGC, and USS UNSA). Since 2011, these organizations are obliged to publish their budgets according to the principle of transparency. The main purpose was to give the members' dues the higher weight in the total of the trade union budgets. Each organization has defined its reporting entity in terms of this issue. A prefix normal word is a binary word with the property that no substring has more 1s than the prefix of the same length. This class of words is important in the context of binary jumbled pattern matching. In this paper we present results about the number \(\textit{pnw}(n)\) of prefix normal words of length n, showing that \(\textit{pnw}(n) =\Omega\left(2^{n - c\sqrt{n\ln n}}\right)\) for some c and \(\textit{pnw}(n) = O \left(\frac{2^n (\ln n)^2}{n}\right)\). Measuring the market power in the ceramic tile industry: An international comparison

This paper measures the degree of competition faced by Spanish and Italian exporters of ceramic tiles in several European Union member states. The results indicate that Spanish producers have a substantial market power while Italian exporters face a high degree of competition. This finding is consistent with the significant gain (loss) in the world production and export shares that Spanish (Italian) producers experienced during the 1990s. The results are also consistent with accounting data. Employee ‘voice’ and working environment in post-communist New Member States: an empirical analysis of Estonia, Latvia and Lithuania

This article examines employee ‘voice’ in workplace health and safety in three Baltic New Member States by means of a cross-national survey. The data point to unresolved problems of voice in the context of rather poor working environments. These present opportunities for collective renewal by trade unions, but paradoxically are more likely to be addressed by employers in the context of significant labour shortages created by a post-European Union accession labour ‘exit’.
Tourism Activity of Member States and Romania's Place within the First Five Years after EU Accession

Abstract This paper is a brief statistical analysis of the evolution of tourism in the EU-27 in the first five years after Romania's accession. The analysis was based on official data published by Eurostat regarding the tourist accommodation capacity by categories, the number of arrivals and overnight stays of tourists and non-residents. I highlighted each time Romania's place within Member States, preferring graphics that are more suggestive than synthetic data tables. In conclusions I have highlighted the changes occurred in Romania, far from those expected after five years as a member of the European Union.
A sensemaking approach to a discursive ethical skill in healthcare management: the case of an oncopaediatric service

International audience; This study uses the case of an oncological paediatric service to discuss sensemaking and discourse ethics in the context of caregiving, building ethical competence to provide the best care possible to children. The patients and their families live in paediatric care, some for several years. At length, an intense relationship may develop between the medical staff and patients' family members, albeit at times a difficult relationship. Still, interviews conducted indicated that when caregivers provided the best care possible to these patients, even in this harsh environment, an ethics of sensitivity made a positive difference both for the patients and the medical staff.…
Utilizing content analysis in teaching materials for children with autism spectrum disorder

It is important to look at how education materials for students with disability view disability itself. Raising the general public's awareness on autism is crucial because of the rise in the antivaxx and anti-science movements, particularly in the United States. This thesis utilizes Content Analysis to explore how a set of teaching materials for students with Autism Spectrum Disorder (ASD) understands ASD and the agency of the ASD child and creates trust with the readers. I analyze two argumentation styles to understand how those forms of argumentation create trust with the readers.
