Abstract Microbial fermentations have long represented a way of natural biopreservation of raw materials, which frequently originated new food products. Among them, traditionally fermented products still manufactured by native populations all around the world are source of lactic acid bacteria (LAB) strains with high biotechnological potential. Microbial community characterization during anaerobic digestion of Scenedesmus spp. under mesophilic and thermophilic conditions

[EN] Microbial communities were thoroughly characterized in a mesophilic anaerobic membrane bioreactor (AnMBR) and a thermophilic continuous stirred tank reactor (CSTR), which were both treating recalcitrant microalgal biomass dominated by Scenedesmus. 16S rRNA amplicon sequencing analysis was performed when the AnMBR achieved 70% algal biodegradation and revealed high microbial diversity, probably due to the high solid retention time (SRT) of the AnMBR configuration. Abstract Harvested microalgae Chlorella spp. and primary sludge were co-digested in a laboratory-scale anaerobic membrane bioreactor (AnMBR) under thermophilic conditions (55 °C). The system was run for 700 days divided into four experimental phases to determine the influence of the organic loading rate on the process performance and the microbial community. The rise in organic loading rate from 0.17 to 0.5 gCOD·L−1·d−1 led to a 35% improvement in methane production. Identification and control of moulds responsible for black spot spoilage in dry-cured ham.

The aims of this work were to identify moulds responsible for black spot spoilage in the drying and cellar stages of dry-cured ham processing and evaluate the effectiveness of preventive actions for controlling this alteration. Four mould strains isolated from spoiled hams were identified by morphological characteristics and the ITS and β-tubulin sequencing. Two of them were Cladosporium oxysporum, one was C. cladosporioides and the remaining one was C. herbarum. These spoiling strains reproduced the black spots on dry-cured ham-based media and ham slices. Because of a general lack of resistance towards antimicrobial peptides (AMPs), they are being relied on as a novel class of therapeutics aiming to conquer drug-resistant bacteria and fungi. ABSTRACT Klebsiella pneumoniae sequence type (ST) 307, carrying bla KPC-3 , bla CTX-M-15 , bla OXA-1 , aac(6′)-Ib-cr , and qnrB 1 genes, is replacing the predominant hyperepidemic ST258 clone in Italy. Whole-genome and complete plasmid sequencing of one ST307 strain was performed and new features were identified.

Abstract The performance and microbial community analysis of an expanded granular sludge bed reactor (EGSB) treating wastewater polluted with mixtures of ethanol and glycol ethers –such as 1-ethoxy-2-propanol (E2P) and 1-methoxy-2-propanol (M2P)– were evaluated. The results showed good EGSB performance during start-up (100% of ethanol) in terms of global removal efficiency (RE > 95%). When glycol ethers were added, an initial adaptation period was observed of ~20 days. While the RE of M2P became complete, the RE of E2P reached only 65%. Identification and structural characterization of LytU, a unique peptidoglycan endopeptidase from the lysostaphin family

AbstractWe introduce LytU, a short member of the lysostaphin family of zinc-dependent pentaglycine endopeptidases. It is a potential antimicrobial agent for S. aureus infections and its gene transcription is highly upregulated upon antibiotic treatments along with other genes involved in cell wall synthesis. We found this enzyme to be responsible for the opening of the cell wall peptidoglycan layer during cell divisions in S. aureus. LytU is anchored in the plasma membrane with the active part residing in the periplasmic space.
