Extracts deriving from olive mill waste water and their effects on the liver of the goldfish Carassius auratus fed with hypercholesterolemic diet

2014

The present research aims to evaluate the beneficial effects of polyphenols derived from waste water from a olive mill, obtained by non-plastic molecular imprinting device, in a hypercholesterolemic diet on Carassius auratus, commonly known as goldfish that was selected as experimental model. The study was conducted with morphological and histochemical analyses and also the data were supported by immunohistochemical analysis. Results show the beneficial activity of polyphenols with a reduction of the damage in the steatotic group, confirming that they may be suggested in the treatment of diseases by lipid accumulation, and used as any addition in feed for farmed fish, in order to improve th…

Foodomics assessed by Fourier transform mass spectrometry

2019

Abstract With its ultrahigh resolution power and excellent mass accuracy, Fourier transform ion cyclotron resonance mass spectrometry is the perfct tool to analyze the “foodome” as the set of all polar small molecular compounds present in an investigated food sample. We present here selected applications of this technique in unraveling the metabolome in complex foods (thermally affected, fermentation products, distillates) such exemplified with Maillard reaction products or with wines and spirits. Technical considerations for high resolution mass analyzers are provided from a practical point of view. Moreover, aspects of food safety and nutritional quality are covered by presenting applicat…

Mediterranean diet and longevity: an example of nutraceuticals?

2013

The Mediterranean diet (Mediet) is an eating pattern characterizing a lifestyle and culture that has been reported to contribute to better health and quality of life. The Mediet reflects food patterns typical of Mediterranean regions, where olive oil plays an essential role in the food pyramid. Olive oil is located in the middle and it is considered the principal source of dietary fat because of its high nutritional quality (particularly extra virgin olive oil). Several studies have shown the effect of the Mediet on healthy status by lowering the rates of coronary heart disease, certain cancers, and some other age-related chronic diseases. Although the scientific literature regarding diet a…

Rootstock and fruit canopy position affect peach [Prunus persica (L.) Batsch] (cv. Rich May) plant productivity and fruit sensorial and nutritional q…

2013

The right combination of rootstock and training system is important for increased yield and fruit sensorial and nutritional homogeneity and quality with peach [Prunus persica (L.) Batsch]. We investigated the effects of rootstock and training system on these parameters, testing the effect of vigorous GF677 and weaker Penta - rootstock on 'Rich May' peach cultivar. Fruit position effects regarding photosynthetically active radiation availability, along the canopy profile using the Y training system, were investigated. The positive relationships between total polyphenols content and antioxidant capacity according to canopy vigour and architecture were determined for the two scion/stock combin…

Composition nutritionnelle des plats complets végétariens et non-végétariens proposés en restauration scolaire : une étude du collectif EnScol

2020

Context: In France, since 1 November 2019, all school restaurants are required to offer a vegetarian menu at least once a week. This study was initiated and co-developed by researchers and school catering professionals from the « EnScol » team.Aim: To assess the nutritional content of vegetarian dishes served in school meals in France. Methods: The nutritional content of main dishes (i.e. the combination of protein dish and side dish) was studied and compared according to whether the dishes were vegetarian (n=315) or non-vegetarian (n=669). Within the vegetarian main dishes, three categories were defined and compared: dishes without any ingredient of animal origin, dishes with cheese, and di…

A new sustainable formulated feed based on discards from food industries for rearing the sea urchin Paracentrotus lividus (Lmk)

2019

During a 18‐week experiment in a sea‐based system, Paracentrotus lividus was fed with two formulations of a new sustainable feed whose main ingredients were food farming discards, mostly outermost lettuce leaves, in different percentage. Egg white was added as protein source and binder, and a little amount of commercial fish feed was added as lipid source. At the end of the experiment, a high survival rate (>80%) and an increase in test diameter (22%), total weight (130%), gonad weight (240%) and gonad index expressed as size‐adjusted gonad weight (288%) were recorded. Gonads achieved a good colour and high levels of essential and polyunsaturated fatty acids, hence representing a commerc…

Reducing salt and fat while maintaining taste: An approach on a model food system

2013

Unbalanced diets with an excess consumption of fat, salt and low‐size sugars contribute to the development of pathologies such as obesity, cardiovascular diseases, and diabetes. As a consequence, worldwide healthcare authorities advocate salt, fat and sugar reduction in food. However, the multifunctional roles of these ingredients in both food composition and perception prevent a simple reduction of their content. Several strategies are currently investigated to design healthier food while maintaining its taste and consumer acceptability. Among these strategies, the one relying on crossmodal sensory compensation is tested within the framework of the EU‐TeRiFiQ research project. The main obj…

Influence of Two Different Coating Application Methods on the Maintenance of the Nutritional Quality of Fresh-Cut Melon during Storage

2021

This study aimed at evaluating the effects of two coating application methods, spraying and dipping, on the quality of fresh-cut melons. An alginate-based coating containing both ascorbic and citric acid was applied at two concentrations (5% and 10%) with both methods on fresh-cut melon. The nutritional quality of the products was investigated during 11 days of storage at 10 °C. The suitability and adaptability of the applied coatings on the fruit were evaluated based on rheological and microstructural properties. Moisture, carotenoids, total polyphenols and ascorbic acid content were analyzed on melon samples during storage. Results showed that the coating solution applied by the dipping m…

Who should choose children's mid-afternoon snack: the mothers or their children?

2019

International audience; Children's mid-afternoon snack is usually characterized by the consumption of fatty and sweetened foods (Anses, 2017). To the best of our knowledge, no study has investigated differences or similarities in terms of nutritional quality of mid-afternoon snack choices made by children or by their mothers. Our first goal was to compare the nutritional quality of children's mid-afternoon snack choices made by mothers or by themselves. Our second goal was to see whether the potential differences were maintained or not when mothers and children were informed about the product's nutritional quality. We invited 95 mother-child dyads (children mean age = 9.4±0.10) to choose in…
