Chemo-biological analysis applied to the olfaction field
2019
Human are surrounded by numerous molecules in the air from a limited number of olfactory receptors [1], and one odor is not caused by only one compound but by a mixture of molecules [2]. Two different perceptions exist, the first being the heterogeneous perception which is the distinction between the odor components of the mixture. The second perception is homogeneous and consists in a mixture of molecules resulting in a single odor which is not possible to distinguish between odor components of the mixture. There are two types of homogeneous perceptions:1-When one of the mixture components covers the other constituents and we can only smell the odor of one of the mixture components: it is …

Des chercheurs du Centre des Sciences du Goût et de l’Alimentation ont réalisé une expérience montrant que les individus obèses pourraient être influencés dans leurs choix alimentaires par des stimuli non consciemment perçus, comme des odeurs. Chlorine flavor perception and neutralization in drinking water
2010
For water suppliers, using chlorine is necessary to ensure water bacteriological quality from the treatment plant to the consumers’ tap. However, chlorine flavour is one of the most common reasons advocated for choosing tap water alternatives as drinking water. As a consequence, the putative link between chlorine flavour perception and tap water consumption is an issue in drinking water habits studies. Since the sensory mechanisms involved in chlorine flavour perception remained largely unknown, the main objective of this thesis work was to first highlight those mechanisms and then to identify potential lever chlorine flavour sensory neutralisation. In a first step, we demonstrated that hypo…
Rules and Mechanisms of Perceptual Interaction of Odor Mixtures : Application to Icewine aroma
2021
Icewine was used as an experimental object, and hundreds of wine- or food-related odor mixtures were designed and investigated for the first time based on the identification and analysis of icewine’ odorants. The aim of the thesis work was to explore the key odor elements that affected the perception of odor mixtures and the general laws behind olfactory perceptual interactions. The thesis manuscript contains seven chapters:The first review of the literature gives a brief introduction to the olfactory system and odor perception. Then, odorants’ mixture perception is highlighted through examples of interactions between odorants at the perceptual level. Research progress in perceptual interac…

When your nose knows what you see : multisensory development of visual categorization : evidence from odor-driven face categorization in the human br…
2020
This thesis examines whether and how odors contribute to the development of visual categorization in the human brain using fast periodic visual stimulation coupled with scalp electroencephalography (FPVS-EEG). Specifically, we sought to characterize if a neural visual response selective to the face category is modulated by the presence of a body odor in both infants (Study 1, 2, 3) and adults (Study 4).In infants, the selectivity of the odor effect on visual categorization was addressed by testing separately three categories in three groups of 4-month-old infants presented with a control odor or their mother’s odor. We observed that a face-selective response is largely enhanced by maternal …
Differential memory persistence of odor mixture and components in newborn rabbits: competition between the whole and its parts
2014
Interacting with the mother during the daily nursing, newborn rabbits experience her body odour cues. In particular, the mammary pheromone (MP) contained in rabbit milk triggers the typical behaviour which helps to localize and seize the nipples. It also promotes the very rapid appetitive learning of simple or complex stimuli (odorants or mixtures) through associative conditioning. We previously showed that 24h after MP-induced conditioning to odorants A (ethyl isobutyrate) or B (ethyl maltol), newborn rabbits perceive the AB mixture in a weak configural way, i.e. they perceive the odour of the AB configuration in addition to the odours of the elements. Moreover, after conditioning to the m…
