The caramel flavour: impacts of the volatile and the non-volatile fraction on perception

2013

The aim of this thesis was to investigate the impact of the volatile odorant fraction and the non-volatile fraction on the perception of caramel flavour. The first step focused on the analytical characterization of the volatile odorant fraction of caramel using Gas Chromatography coupled to Olfactometry (GC/O), GC/Mass Spectrometry (GC/MS) and heart-cutting MDGC/MS/O. Results highlighted the presence of more than one hundred compounds and demonstrated the complexity of the caramel volatile fraction. The objective of the second step was to understand the contribution of odorant compounds identified to the caramel aroma typicality. Literature shows that odour intensity is not sufficient to ev…

Symptomatic bodies: reading and writing the odor of sanctity in French culture (1868-1901)

2021

Using examples from novels by the Goncourt brothers, Huysmans, Zola and Lemonnier, this paper explores the literary representation of the odor of sanctity in regard to the main epistemological discourses of the second half of the 19th century. In this deeply anticlerical intellectual context, the Christian myth of the odor of sanctity is analyzed by medical professionals and scientists as a pathological phenomenon. Although taking into account the divergent aesthetics of the selected authors, the study focuses mostly on the ambiguity literary texts maintain between the unspeakable experience of religious ecstasy and a symptomatic vision of the body.

Le traitement des expressions faciales au cours de la première année : développement et rôle de l'olfaction

2015

The first year of life is critical for the development of the abilities to process facial expressions. Olfaction and expressions are both strongly linked to each other, and it is well known that infants are able to multisensorially integrate their environment as early as birth. However, most of the studies interested in multisensory processing of facial expressions are restricted to the investigation of audio-visual interactions. In this thesis, we firstly aimed to resolve different issues concerning the ontogenesis of infants’ ability to process facial expressions. Our results allowed to specify the development of visual exploratory strategies of facial emotions along the first year of life…

The perception of odor objects in everyday life: a review on the processing of odor mixtures

2014

International audience; Smelling monomolecular odors hardly ever occurs in everyday life, and the daily functioning of the sense of smell relies primarily on the processing of complex mixtures of volatiles that are present in the environment (e.g., emanating from food or conspecifics). Such processing allows for the instantaneous recognition and categorization of smells and also for the discrimination of odors among others to extract relevant information and to adapt efficiently in different contexts. The neurophysiological mechanisms underpinning this highly efficient analysis of complex mixtures of odorants is beginning to be unraveled and support the idea that olfaction, as vision and au…

Effet d'une éducation sensorielle sur les préférences et les comportements alimentaires d'enfants en classe de cours moyen (CM).

2008

Sensory experience of a meal (or mere exposure) can interact with preferences and food behaviour. On the other hand, current campaigns of nutritional information try to modify food behaviours by making people aware of the dangers of over eating and providing guidelines for healthy eating behaviour. Nevertheless, this approach doesn't take into account the pleasure to eat. The project "EduSens" bases itself on a hedonist and sensory approach in taste education that unites exposure to food and information about food. The aim of the study was to first develop tools to evaluate the effects of this sensory education and then to use them to measure the effects of a sensory education in a school c…

Non-conscious effect of food odors on children's food choices varies by weight status

2017

Open access original research (article number UNSP 16); OBJECTIVE: Food cues are omnipresent in the daily environment and may influence eating behavior even non-consciously. An increased reactivity to food cues, such as food odors, has been shown to be correlated with obesity in children. The objective of this study is to investigate whether the non-conscious influence of food odors on children's food choices varies by their weight status. METHODS: Seventy-four children, of whom 29 were obese, took part in this study. The children performed a food choice intention task presented as a computer game in which 30 pairs of food images (a fatty-sweet food picture vs. a fruit picture) successively…
