Effect of fat nature and aroma compound hydrophobicity on flavor release from complex food emulsions.

Complex food emulsions containing either hydrogenated palm kernel oil (vegetable fat) or anhydrous milk fat (animal fat) were flavored by using different aroma compounds. The fats differed by their fatty acid and triacylglycerol compositions and by their melting behavior, while the aroma compounds (ethyl butanoate, ethyl hexanoate, methyl hexanoate, mesifurane, linalool, diacetyl, cis-3-hexen-1-ol, and gamma-octalactone) differed by their hydrophobicity. Application of differential scanning calorimetry to fat samples in bulk and emulsified forms indicated differences in the ratio of solid-to-liquid between temperatures ranging from 10 to 35 degrees C. [EN] The crystal structures of numerous iodinated ortho-carboranes have been studied, which has revealed the diversity of intermolecular interactions that these substances can adopt in the solid state. The nature-mostly as it relates to hydrogen and/or halogen bonds-and relative strength of such interactions can be adjusted by selectively introducing substituents onto the cluster, thus enabling the rational design of crystal lattices. Shelter and remotely sensed night temperatures in orange groves

In previous papers we have used a linear regression approach for determining nocturnal air temperature in orange groves from satellite thermal data. However, this procedure has a poor precision (≈ 2 °C) for applications such as frost forecasting. For this reason a theoretical method has been proposed, which is based on the following assumptions: (1) the air temperature (Ta) is the result of the convective heat exchange between ground and air, and between air and orange trees, and (2) the remotely-sensed temperature (T) can be expressed as a function of ground (Tg) and orange tree (Ts) temperatures. Fluorescent star-shaped mol- ecules and dendrimers with a 1,3,5-tri- phenylbenzene moiety as the core and 3 or 9 carborane derivatives at the pe- riphery, have been prepared in very good yields by following different ap- proaches. One procedure relies on the nucleophilic substitution of Br groups in 1,3,5-tris(4-(3-bromopropoxy)phe- nyl)benzene with the monolithium salts of methyl and phenyl-o-carborane. Pythium burgundicum sp. nov. isolated from soil samples taken in French vineyards.

During the course of investigation on pythiaceous fungi occurring in the Burgundian vineyards, a new species of Pythium has been isolated. This oomycete is characterized by its nonproliferating and nonsporulating, spherical to cylindrical type of sporangia (hyphal bodies) germinating through germ tubes, smooth-walled oogonia that are supplied with hypogynous, monoclinous or rarely diclinous antheridia, and smooth-walled oospores. The antheridial cells are very prominent and are reminiscent of Pythium bifurcatum, Pythium segnitium and Pythium longandrum described previously by the author.
