Influence of polysaccharides on wine protein aggregation.

Abstract Polysaccharides are the major high-molecular weight components of wines. In contrast, proteins occur only in small amounts in wine, but contribute to haze formation. The detailed mechanism of aggregation of these proteins, especially in combination with other wine components, remains unclear. This study demonstrates the different aggregation behavior between a buffer and a model wine system by dynamic light scattering. Arabinogalactan-protein, for example, shows an increased aggregation in the model wine system, while in the buffer system a reducing effect is observed. Changes in cell wall pectin and pectinase activity in apple and tomato fruits duringPenicillium expansum infection

Cell wall pectin degradation in apple and tomato fruit during infection by Penicillium expansum was investigated. In infected apple fruit, a significant decrease in the average molecular mass was observed in pectins extracted with CDTA and also in pectins extracted with Na2CO3. In tomato fruits, depolymerisation was also observed in both pectic fractions during infection, the major change being in the pectins extracted with Na2CO3. Analysis of the proteins involved in the structure and synthesis of the cell wall of Ustilago maydis

Abstract A study of the proteins involved in the synthesis and structure of the cell wall of Ustilago maydis was made by in silico analysis of the fungal genome, with reference to supporting experimental evidence. The composition of the cell wall of U. maydis shows similarities with the structural composition of the walls of Ascomycetes, but also shows important differential features. Accordingly, the enzymes involved in the synthesis of the U. maydis wall polysaccharides chitin and β-1,6 glucans displayed some differential characteristics. Exopolysaccharides favor the survival of Erwinia amylovora under copper stress through different strategies.

Erwinia amylovora causes fire blight, a destructive disease of rosaceous plants very difficult to control. We demonstrated that copper, employed to control plant diseases, induces the "viable-but-nonculturable" (VBNC) state in E. amylovora. Moreover, it was previously reported that copper increases production of its main exopolysaccharide (EPS), amylovoran. In this work, the copper-complexing ability of amylovoran and levan, other major EPS of E. amylovora, was demonstrated. Influence of Nitrogen Content on Grape Non-Saccharomyces Glycosidic Activities

This study investigated the influence of nitrogen content on both β-glucosidase and β-xylosidase activities from non-Saccharomyces yeasts. Enzymatic activities were induced by the presence of xylan polysaccharides in the medium. Results show that optimizing β-glucosidase and β-xylosidase enzymatic activities can be determined not only by sugar or ethanol content or pH, but also by the concentration of N in the medium. This is the first work studying the influence of N content on glycolytic enzymes produced by non-Saccharomyces yeasts.

A xyloglucan from persimmon fruit cell walls

Persimmon (Diospyros kaki L.) fruit cell walls have been shown to contain a high proportion of xyloglucan. This hemicellulosic polysaccharide appears to play a crucial role in the softening process that accompanies fruit ripening. In the present work, xyloglucan from persimmon fruit cell walls was extracted, purified and chemically characterized from alkali-extracted hemicelluloses. Monosaccharide analysis of purified xyloglucan showed a molar ratio of Glc:Xyl:Gal:Fuc of 10.0:6.0:3.4:1.4. Linkage analysis showed a high proportion of terminal residues, indicating a low degree of polymerization of side-chains.

Chitin is a naturally occurring fibre-forming polymer that plays a protective role in many lower eukaryotes similar to that of cellulose in plants. Chemically it is a long-chain unbranched polysaccharide made of N-acetylglucosamine residues linked through β-1,4 covalent bonds; it is the second most abundant organic compound in nature, after cellulose.
