Study of relationships between the structure of aroma compounds and their retention-release between vapour phase and dairy gels

An integrated approach physicochemistry and structures activity relationships has been carried out to study the aroma compounds retention-release phenomenon in a fat free dairy gel added with pectin. This study aimed to identify the molecular properties that govern this phenomenon assuming that modifying the structure leads automatically to a change in the retention-release of aroma compounds. Antioxidant Activity and Release Kinetics of Caffeic and p-Coumaric Acids from Hydrocolloid-Based Active Films for Healthy Packaged Food

International audience; Sustainable hydrocolloid-based films containing natural antioxidants, caffeic and p-coumaric acids at different concentrations of 0.5%, 1%, 5%, and 10% w/w of polymers, were designed for packing fatty foods. Antioxidant activities and kinetics for all film formulations were assessed using radical scavenging activity (DPPH), reducing power, and iron chelating ability. Release kinetics of the antioxidants from the films into a food simulant (96% ethanol) were analyzed. Abstract Purpose The ecological importance of arbuscular mycorrhizal fungi (AMF) in plant acquisition of inorganic and organic sources of nitrogen (N) is not clear. To improve understanding of the plant N nutrition ecology, we tested the effect of intraspecific competition and AMF in plant N source use in growth and N acquisition. Water scarcity in the Mediterranean areas is very common and the selection of drought tolerant species is a priority for landscaping purposes in the Mediterranean areas. The objective of this study was to evaluate the effect of water deficit on growth and biomass partitioning of Arbutus unedo, Laurus nobilis, Phillyrea angustifolia and Rhamnus alaternus. An unsupervised region growing method for 3D image segmentation

The paper deals with 3D shape decomposition problem, objects are modelled as finite unions of almost-convex primitives. A new region growing method is proposed to extract meaningful objects parts. Parts are individuated by performing a set-partitioning of surface dominating points. The partition step returns labelled seeds from which to start a region growing procedure that propagate labels onto object surface patches. A fuzzy concept of λ-convexity is introduced to test noised real images. Experimental results are given.

This review first revisits current knowledge about single-leaf function, viz. photosynthesis, chiefly in relation to environmental factors, that underscores the importance of multiple summer stresses. Emphasis is placed on the response different genotypes show under light and heat stress with or without soil-water shortage. Abstract The association of water-soluble vinyl polymers to dimyristoyl phosphatidic acid unilamellar vesicles as a function of pH, temperature and salt content using steady-state fluorescence and viscometry has been investigated. Poly(4-vinyl pyridine) fluorescence data were converted to association isotherms and discussed in terms of binding and partition models. Application of headspace analysis to the study of aroma compounds-lipids interactions

Taking into account interactions between aroma compounds and food components is necessary to better manage the flavoring of food products. These interactions occur at a molecular level and reflect changes, at a macroscopic level, in thermodynamic equilibria, such as solubility or volatility. The rate of transfer of an aroma compound from the liquid to the vapor phase can be affected as well. The behavior of aroma compounds in water and lipid solutions was studied in two complementary ways, a thermodynamic and a kinetic approach (head-space analysis).
