Abstract The blue and red shrimp Aristeus antennatus (Risso, 1816) is one of the most important fishery resources in the Mediterranean Sea. Monthly samplings of blue and red shrimp from June 2006 to May 2007 were landed by the trawl fleet in two northwest Sicilian fishing harbours (San Vito Lo Capo and Terrasini). The carapace length (CL) frequency distribution of females ranged between 15.00 and 59.00 mm, whereas male CLs ranged between 17.00 and 34.00 mm. The combined effects of freezing and modified atmosphere packaging (MAP) (100% N2 and 50% N2 + 50% CO2) on some quality characteristics of Giant Red Shrimp (GRS) (Aristaeomorpha foliacea) was studied during 12-month storage. We analysed the genetic diversity of Melicertus kerathurus (Penaeidae), a commercially valuable penaeid shrimp that is distributed in the Mediterranean Sea and eastern Atlantic Ocean. We examined the polymorphism of a 494 bp DNA segment of the mitochondrial COI region in 173 individuals, sampled in nine Mediterranean and two Atlantic samples, covering the whole range of the species from the tropical waters of the Gulf of Guinea to the eastern part of the Mediterranean Sea. In this study, a microbiological challenge test in three artificially contaminated retail mixed mayonnaise-based ready-to-eat salads stored at refrigerator temperatures (3°C and 7°C) for 48h was carried out. Shrimp-tomato salad, smoked ham salad and garlic cheese salad were separately contaminated by a suspension of particular Listeria monocytogenes strains. The number of L. monocytogenes, Enterobacteriaceae, staphylococci and total plate count (CFU/g) was determined. Listeria monocytogenes growth potential in the salads was calculated and evaluated. The deep‑water rose shrimp, Parapenaeus longirostris (Lucas, 1846), is one of the most valuable and heavily exploited demersal species of the Mediterranean bottom trawl fisheries.
