Proteins bind flavour compounds mostly by hydrophobic interactions and possible hydrogen bonding, as illustrated by molecular visualisation. Addition of fat induces a great retention of hydrophobic compounds, which depend on the nature of fat, degree of unsaturation, hydrophobic chain length of fatty acids. Addition of hydrocolloids modifies the release of hydrophobic aroma compounds, due to a lower diffusion in the matrix. Metal‐organic frameworks (MOFs) have raised a lot of interest, especially as adsorbing materials, because of their unique and well‐defined pore structures. One of the main challenges in the utilization of MOFs is their crystalline and powdery nature, which makes their use inconvenient in practice. Three‐dimensional printing has been suggested as a potential solution to overcome this problem. We used selective laser sintering (SLS) to print highly porous flow‐through filters containing the MOF copper(II) benzene‐1,3,5‐tricarboxylate (HKUST‐1). Abstract This paper presents the results of experimental trials carried out on third-generation, variable dynamic pressure cone decanters to assess machine performance and adjust the process parameters for optimum extraction yield. The results obtained led to the following conclusions: the regulation of the differential velocity screw/bowl allows a better performance of the decanter at low dilutions of the olive paste; it is possible to obtain high efficiency at a low dilution of the olive paste achieving a higher minor compounds content and the more advanced system of regulation leads to better results according to the variations of the ratio between liquid and solid phases, thus optimisin…

International audience; Purpose:To test the efficacy of dietary omega-3 and omega-6 fatty acids in a rat model of glaucoma induced by laser photocoagulation.Methods:Male Sprague Dawley rats were fed for 3 months with a diet containing either: 1) 17% of omega-3 fatty acids (10% EPA + 7% DHA), 2) 10% of omega-6 fatty acids (as GLA), or 3) a combination of both omega-3 and omega-6 fatty acids (10% EPA + 7% DHA + 10% GLA), by comparison with a control group of animals fed with a standard diet deprived of EPA, DHA and GLA (n=10 in each group).
