Advances in Wine Fermentation

2021

Fermentation is a well-known natural process that has been used by humanity for thousands of years, with the fundamental purpose of making alcoholic beverages such as wine, and also other non-alcoholic products. From a strictly biochemical point of view, fermentation is a process of central metabolism in which an organism converts a carbohydrate, such as starch or sugar, into an alcohol or an acid. The fermentation process turns grape juice (must) into wine. This is a complex chemical reaction whereby the yeast interacts with the sugars (glucose and fructose) in the must to create ethanol and carbon dioxide. Fermentation processes to produce wines are traditionally carried out with Saccharo…

Characterization of the autoantigen La (SS-B) as a dsRNA unwinding enzyme

1997

During the analysis of the La (SS-B) autoantigen for catalytic activities an ATP-dependent double-stranded RNA unwinding activity was detected. Both native and recombinant La proteins from different species displayed this activity, which could be inhibited by monospecific anti-La antibodies. La protein was able to melt dsRNA substrates with either two 3'-overhangs or a single 3'- and a 5'-overhang. Double-stranded RNAs with two 5'-overhangs were not unwound, indicating that at least one 3'-overhang is required for unwinding. Sequence elements of the La protein that might be involved in dsRNA unwinding, such as an evolutionarily conserved putative ATP-binding motif and an element that is hom…

Learn to Cache: Machine Learning for Network Edge Caching in the Big Data Era

2018

The unprecedented growth of wireless data traffic not only challenges the design and evolution of the wireless network architecture, but also brings about profound opportunities to drive and improve future networks. Meanwhile, the evolution of communications and computing technologies can make the network edge, such as BSs or UEs, become intelligent and rich in terms of computing and communications capabilities, which intuitively enables big data analytics at the network edge. In this article, we propose to explore big data analytics to advance edge caching capability, which is considered as a promising approach to improve network efficiency and alleviate the high demand for the radio resou…

Recognizing Video Resolution by Monitoring Memory Metrics in Mobile Clients

2019

Content delivery is one of the most successful applications in mobile networks. Mobile edge servers are significantly contributing to the improvement of this type of applications, by also performing resolution adaptations as a function of the radio link quality observed by the users. In this paper, we face the problem of dynamically tracking the perceived video resolution by mobile clients in a mobile edge environment to guarantee an agreed Service Level Agreement (SLA). To this purpose, we propose a protocol-agnostic approach, based on monitoring some memory metrics of a running video streaming process at the mobile client, for identifying the time-varying resolution of the video content.
