Fermentation is a well-known natural process that has been used by humanity for thousands of years, with the fundamental purpose of making alcoholic beverages such as wine, and also other non-alcoholic products. From a strictly biochemical point of view, fermentation is a process of central metabolism in which an organism converts a carbohydrate, such as starch or sugar, into an alcohol or an acid. This paper focuses on ‘violence on unarmed people’ as the unifying theme that underlies the structure of the tragedy with an anthropopoietic function, what means to build up, by contrast, models of human and humanity.. All the three forms of violence against unarmed people, which can be singled out in the tragedy, are analyzed. Resumen tomado de la publicación Los estudios sobre antecedentes y consecuencias del mobbing han empleado mayoritariamente diseños transversales, lo cual impide determinar la causalidad de las relaciones. En este trabajo se analizó, mediante modelos de ecuaciones estructurales, la relación entre el mobbing y algunas variables consideradas antecedentes (conflictos interpersonales, conflicto de rol, ambigüedad de rol y apoyo social) o consecuencias (problemas de salud e inclinación al absentismo) del fenómeno.
