Sensory methodology developed for the investigation of sciaccarello wine concept

<p style="text-align: justify;">The aim of the present work was to underline the existence of a sensory space relevant to Sciaccarello wines. Twenty-eight wines were selected for viticultural and enological characteristics, using 1/2 Sciaccarello/Non- Sciaccarello ratio. Sensory analyses (orthonasal then overall perceptions) were performed with a panel composed of seventeen judges. All of the judges were experienced in Sciaccarello wines knowledge. Identification and quantification of valuable phenolic compounds from red wines from western part of Romania

The aim of this paper is to identify and quantify different phenolic compounds known and appreciated for their antioxidant action from five red wines from the west side of Romania. For the determinations HPLC methods were used, the samples were done in cycles of three for better results. Phenolic acids that drew the attention have different values that ranging from 1.3007 mg/L (elagic acid) to 19.3315 (t-cafftaric acid), some various flavonoids (flavone, flavonoli și flavanoli) the values of which were recorded between 0.9997 mg/L (apigenin) and 56.1617 mg/L (catechin) and the stilbens namely the resveratrol has reached the maximum value of 8.1427 mg/L. This paper presents the influence of raw material on wine aging and determining of the optimal duration of wine aging in oak vessels and glass vessels. The potential quality of red wines from Cabernet Sauvignon Drăgăşani is highlighted more in the aging process to oak vessels and glass vessels.

Many studies have been conducted on the effects of red wine polyphenols on certain diseases, primarily, coronary heart disease (CHD) and, in this respect, evidence has been demonstrated that intake of red wine is associated with a reduction of CHD symptomatology. In this framework, the purpose of this review is to illustrate the effects of polyphenols on immune cells from human healthy peripheral blood. Data will show that polyphenols are able to stimulate both innate and adaptive immune responses. In particular, the release of cytokines such as interleukin (IL)-12, interferon (IFN)-gamma, and IL-10 as well as immunoglobulins may be important for host protection in different immune related …
Evaluation of plasma antioxidant status after red wine intake

Several studies report that the plasma antioxidant capacity (PAC) increases after a single ingestion of red wine. However, data on the different behaviour of PAC after food intake in subjects of the same sex are still lacking. On the basis of these observations some investigations were undertaken in order to evaluate the effects of red wine intake on PAC in a homogeneous groups of healthy female volunteers (n=18). Additionally, the possible correlation between increase of PAC values and increase in uric acid levels was also assessed.
