Apparent and quantitative loss of fatty acids and triacylglycerols at frying temperatures

[EN]: Olive and sunflower oils were heated at 180 °C for 5, 10 and 15 hours with the aim of defining the changes in the contents of fatty acid methyl esters (FAME) and triacylglycerols (TAG) under frying conditions. Differences between apparent and real loss of FAME or TAG are defined for an adequate interpretation of the changes taking place at high temperature. Such differences depend on the expression of the results and frequently result in erroneous conclusions. Results showed that from the normalized composition it could be deduced that only the most unsaturated FAME (C18:2) or TAG containing it was significantly altered. Proteins bind flavour compounds mostly by hydrophobic interactions and possible hydrogen bonding, as illustrated by molecular visualisation. The first part of this chapter provides a general introduction to the various extant species of flamingos, including their physical descriptions, unique characteristics, numbers in the wild, and geographical distributions. The second part depicts a brief history of the discovery and scientific study of flamingos, from the earlier accounts dating from the 16th century to the development of the first long-term studies of banded populations in the second half of the 20th century. The third and final part of this chapter offers some perspectives for future research.

Abstract In this note we consider a certain degenerate variational problem with constraint identically zero. The exact growth of the solution near the free boundary is established. A consequence of this is that the free boundary is porous and therefore its Hausdorff dimension is less than N and hence it is of Lebesgue measure zero.
