Salt and fat contents in model cheeses influence the release of sodium ions and aroma compounds
2012
The health authorities recommend a reduction in salt (NaCl) and fat contents of foodstuff. But reducing such components without affecting acceptability is a major challenge, particularly because of the interactions with other ingredients, such as aroma compounds. One way could be to increase the mobility of both sodium ions and aroma compounds in food matrix and their release during consumption. This study consists in a multimodal approach to understand the effect of changes in composition of model cheeses on the mobility and release of flavour molecules (NaCl, aroma compounds). Six flavoured model cheeses have been formulated (three fat/protein contents, two NaCl contents). The rheological…
Supramolecular complexes formed by dimethoxypillar[5]arenes and imidazolium salts: A joint experimental and computational investigation
2017
To gain more insights into the factors acting on the stability of complexes formed by pillar[5]arenes, we investigated the interaction of dimethoxypillar[5]arene with some 1-(n-alkyl)-3-(9-anthracenylmethyl)-imidazolium based organic salts. In particular, we used salts differing in not only the anion nature ([Cl−], [BF4−], [NTf2−] and [SbF6−]) and alkyl chain length (butyl, octyl and dodecylimidazolium derivatives), but also the presence of a hydrogenated or fluorinated tail (octyl and perfluorooctylimidazolium derivatives). Host–guest systems were analysed in solution, solid state and gas phase, using a combined approach of different techniques like fluorescence, 1H NMR, ESI-MS, DSC and DF…
Copper(II) and nickel(II) complexes of pyridylamido hexadentate ligands: chemical speciation and spectroscopic studies
2003
Abstract Two novel potentially hexadentate ligands, 1,10-(2-bis picolinamide)-4,7-diazadecane (pycdpnen) and 1,8-bis(2-picolinamide)-3,6-dioxaoctane (pycdado) have been synthesised as their hydrochloride salt; its protonation constants and the stability constants of the copper(II) and nickel(II) chelates have been determined by potentiometry. Amide groups deprotonation permits the formation of [MLH −1 ] + species in all cases, while only pycdado gives [MLH −2 ] species. The solid complexes of copper and nickel with the neutral and the deprotonated ligands have been synthesised and characterised by IR, UV–Vis and ESR spectroscopy. The amidic groups are coordinated through the oxygen atoms in…
Formation and Transformations of Organic Salt Hydrates: Four Encenicline Hydrochloride Monohydrates and Respective Isostructural Desolvates
2018
Encenicline hydrochloride (Enc-HCl) crystallizes in four different monohydrate phases, but at the same time crystallization in a nonsolvated phase is not observed, indicating that water plays a crucial role in guiding the crystallization process and ensuring structure stability. All monohydrate phases show exceptionally high stability, and the main structural motif stays intact even after dehydration, leading to isostructural (for I and II) or isomorphic (for III) desolvates. Three monohydrate phases with determined crystal structure information consists of Enc-HCl-water hexamers that are stacked into similar slabs, that are further packed identically in monohydrates I, II, and III. The fea…
Anion-Assisted Crystallization of a Novel Type of Rhenium(IV)-Based Salt
2016
A novel rhenium(IV)–manganese(II) double salt of formula (NBu4)10[{ReCl4(ox)}3Mn]2[ReCl6] (1) (NBu4+ = tetra-n-butylammonium cation and ox2– = oxalate dianion) has been prepared through the simultaneous use of two different anionic ReIV complexes, namely, [ReCl4(ox)]2– and [ReCl6]2–, in the presence of MnII ion, the [ReCl6]2– anion playing a key role in the crystallization process. 1 has been magnetically characterized and its crystal structure determined by single-crystal X-ray diffraction. The study of the magnetic properties reveals the occurrence of intramolecular antiferromagnetic exchange between ReIV and MnII ions. Remarkably, 1 is the first reported example of ReIV salt based on two…
A New Synthetic Method and Solution Equilibria for the Chlorotitanate( IV ) Anions − Evidence for the Existence of a New Species: [Ti 2 Cl 11 ] 3−
2004
TiCl3 is oxidized by SOCl2 in the presence of the appropriate amount of [NEt3Bz]Cl or [PPN]Cl [Bz = benzyl; PPN = bis(triphenylphosphanyl)iminium] to afford the corresponding salts of [Ti2Cl9]−, [Ti2Cl10]2− or [TiCl6]2−. The results of cyclic voltammetric and solution IR studies in the Ti−Cl stretching region are interpreted in terms of a rapid chloride-redistribution equilibrium between [Ti2Cl10]2− on one side and a mixture of [Ti2Cl9]− and a previously unreported [Ti2Cl11]3− species on the other side. In the solid state, however, a compound with the [PPN]3[Ti2Cl11] stoichiometry exists as a mixture of [PPN]2[Ti2Cl10] and [PPN]2[TiCl6]. The PPN salt of [Ti2Cl9]− has been structurally chara…
Crystal Engineering Applied to Modulate the Structure and Magnetic Properties of Oxamate Complexes Containing the [Cu(bpca)]+ Cation
2016
This work deals with the crystal engineering features of four related copper(II)-based compounds with formulas {[{Cu(bpca)}2(H2ppba)]·1.33DMF·0.66DMSO}n (2), [{Cu(bpca)(H2O)}2(H2ppba)] (3), [{Cu(bpca)}2(H2ppba)]·DMSO (4), and [{Cu(bpca)}2(H2ppba)]·6H2O (5) [H4ppba = N,N′-1,4-phenylenebis(oxamic acid) and Hbpca = bis(2-pyridylcarbonyl)amide] and how their distinct molecular and crystal structures translate into their different magnetic properties. 2 and 3 were obtained through the hydrolytic reaction of the double-stranded oxamato-based dipalladium(II) paracyclophane precursor of formula [{K4(H2O)2}{Pd2(ppba)2}] (1) with the mononuclear copper(II) complex [Cu(bpca)(H2O)2]+, either in a water…

2011
A pentanuclear M(5)L(6) coordination cage is self-assembled in solution from a rigid linear heteroditopic phen-tpy ligand and an iron (II) salt.
Cross-modal interactions between taste and smell: Odour-induced saltiness enhancement depends on salt level
2011
International audience; In recent years, health concerns related to salt have led to extensive research on low-salt foods. One major remaining issue is to reduce sodium content while still providing the salty fix, to maintain food appreciation, acceptance and choice. Using well-selected odours has been proposed to compensate for sodium chloride reduction in food, due to the cross-modal interactions between odour and taste. However, interactions between taste and odour, with regards to saltiness, remain poorly investigated. Moreover, although a few studies have assessed the influences of odour and sweet supra-threshold intensity on cross-modal interactions, none focused directly on how they …
Reaction of an open-chain analogue of Reissert compound hydrofluoroborate salt with ethyl acrylate. A reinvestigation
1998
Abstract The reaction of an open-chain analogue of Reissert compound hydrofluoroborate salt with ethyl acrylate does not give a [4+2] cycloadduct as previously described, but a [3+2] cycloadduct which evolves to a 2-pyridone 15.
