However, the intake of fiber is too low and the health authorities recommend a higher intake of wholemeal bread and cereals. In addition, we throw away as much as 190 000 bread in Norwegian garbage cans every day throughout the year, which is negative in light of the environment. In 2006 the, the Panel on Nutrition, Dietetic Products, Novel Food and Allergy in the Norwegian Scientific Committee for Food Safety (VKM) adapted a Danish model for assessing applications concerning food fortification into Norwegian conditions. The fortification model is presently used by the Norwegian Food Safety Authorities as a tool in the management of applications on food fortification.

Acceptability of partially dealcoholized wines - Measuring the impact of sensory and information cues on overall liking in real-life settings

International audience; In this study, the effect of partial alcohol reduction in wine on consumer expectation and overall liking was investigated in real-life settings (by a Home-Use-Test). By varying the wine in the bottle and by manipulating the information on the label, it was possible to assess the relative impact of sensory properties and information cues on overall liking. Standard Chardonnay and Syrah wines were partially dealcoholized from about 13.5% to about 9.5%. Exhaled breath analysis for early disease detection may provide a convenient method for painless and non-invasive diagnosis. In this work, a novel, compact and easy-to-use breath analyzer platform with a modular sensing chamber and direct breath sampling unit is presented. The developed analyzer system comprises a compact, low volume, temperature-controlled sensing chamber in three modules that can host any type of resistive gas sensor arrays. The efficiency of enzyme replacement therapy in pancreatic insufficiency is usually judged on the grounds of clinical improvement and the effect on steatorrhea: treatment is thought to be successful if steatorrhea is abolished or, at least, reduced. In the majority of patients, the amount of enzyme necessary to alleviate steatorrhea can be reduced if lipase is protected against acidic inactivation either by blocking H2 secretion of the stomach or by protecting enzymes by pH-sensitive enteric coating. However, steatorrhea is frequently not abolished and a differential treatment may be necessary in each patient.
RP-HPLC Determination of Tiger Nut and Orgeat Amino Acid Contents

The amino acid profile of 11 samples of tiger nuts ( Cyperus esculentusL.) grown in the area of “L'Horta Nord” in Valencia (Spain) and one sample of African origin were determined, along with the amino acid contents of 10 samples of natural orgeat from Valencia. Protein was hydrolysed by hydrochloric acid at 110 °C for 23 h, and amino acids were derivatised with AQC and determined by RP-HPLC with fluorescence detection. The chromatographic conditions were optimised. Effective pair potential between charged nanoparticles at high volume fractions

Simulations of charged colloidal dispersions are technically challenging. One possible workaround consists in reducing the system to the colloids only, whose interactions are described through an effective pair potential, wf. Still, the determination of wf is difficult mainly because it depends on the colloidal density, ϕ. Here we propose to calculate wf from simulations of a pair of colloids placed in a cubic box with periodic boundary conditions. Colloidal photonic crystals were prepared from monodisperse core-shell particles. The shell is hereby formed from a functional monomer, such as glycidylmethacrylate or different reactive ester monomers, which can perform chemical reactions and the core from a standard monomer, which yields highly monodisperse colloids. It was possible to crystallize the core-shell particles into artificial opals with excellent optical properties. Re-entrant glass transition in a colloid-polymer mixture with depletion attractions.

Performing light scattering experiments we show that introducing short-ranged attraction to a colloidal suspension of nearly hard spheres by addition of free polymer produces new glass transition phenomena. We observe a dramatic acceleration of the density fluctuations amounting to the melting of a colloidal glass. Increasing the strength of the attractions the system freezes into another nonergodic state sharing some qualitative features with gel states occurring at lower colloid packing fractions. This reentrant glass transition is in qualitative agreement with recent theoretical predictions.
Controlling the wetting properties of the Asakura-Oosawa model and applications to spherical confinement.

We demonstrate for the Asakura-Oosawa model and an extension of this model that uses continuous rather than hard potentials, how wetting properties at walls can be easily controlled. By increasing the interaction range of the repulsive wall potential acting on the colloids (while keeping the polymer-wall interactions constant) polymers begin to substitute colloids at walls and the system can be driven from complete wetting of colloids via partial wetting to complete wetting of polymers. As an application, we discuss the morphology and wetting behavior of colloid-polymer mixtures in spherical confinement.
