Aroma Volatility from Aqueous Sucrose Solutions at Low and Subzero Temperatures

International audience; The gas-liquid partition coefficients of ethyl acetate and ethyl hexanoate have been measured in water and aqueous sucrose solutions from 25 to -10 degrees C by dynamic headspace. Experiments were carried out on sucrose solutions at temperatures where no ice formation was possible. Results showed that when sucrose concentration increased, aroma volatility increased except for ethyl hexanoate and in the highest sucrose concentration solution (57.5%). A quasi-linear temperature decrease on aroma volatility was observed in sucrose solutions from 25 to around 4 and 0 degrees C. Influence of pre-fermentative addition of aqueous solution tannins extracted from oak wood (Quercus petraea) on the composition of Grillo wines

AbstractIn this research, the chemical characterization of fixed and volatile compounds of two different tannins in aqueous solution (Pratiko® L-Harvest and L-Fruit) extracted from oak wood, has been studied. The influence of the above tannins, at different concentrations, on the alcoholic fermentation kinetics and on the composition and sensorial characteristics of a white wine were then evaluated. High-resolution numerical modelling of the barotropic tides in the Gulf of Gabes, eastern Mediterranean Sea (Tunisia)

International audience; A high-resolution 2D barotropic tidal model was developed for the Gulf of Gabes and used to characterise hydrodynamic processes and tidal dynamics. The model is based on the Regional Ocean Modelling System. It is forced at the open boundaries by the semidiurnal M2 and S2 astronomical components while meteorological forcing has been neglected. The model results show good agreement with observations confirming that it reproduces the gulf's main tidal characteristics reasonably well. Satellite survey of seasonal trophic status and occasional anoxic 'malaigue' crises in the Thau lagoon using MERIS images

International audience; The Thau lagoon, located in southern France, suffers episodically from anoxic crises locally known as 'malaigue'. Such crises mostly occur under warm conditions, low winds leading to a strong eutrophication of the lagoon. The development of a sulphur bacterium sometimes gives locally to the waters a 'milky turquoise' appearance and leads to shellfish mortality. Remote sensing methods enable detection of solar-induced chlorophyll a fluorescence. However, to unleash the full potential of this signal, intensive cross-disciplinary work is required to harmonize biophysical and ecophysiological studies.
