Replacement of meat by spinach on physicochemical and nutritional properties of chicken burgers

This study describes the replacement of meat by spinach on physicochemical and nutritional properties of chicken burgers. Three batches of chicken burgers were manufactured: control (burgers prepared with 100% of chicken meat), E10 (burgers manufactured with 10% of spinach and 90% of chicken meat), and E30 (burgers pre‐ pared with 30% of spinach and 70% of chicken meat). The replacement of meat by spinach significantly affected the color parameters, decreasing L*, a*, and b* values with the increasing of spinach amount addition. The influence of high pressure processing on antimutagenic activities of fruit and vegetable juices

Abstract In model experiments using the Salmonella/reversion assay (Ames test) and the carcinogen 2-amino-3-methyl-imidazo[4,5-f]quinoline (IQ), antimutagenic activities against IQ had been detected in about 70% of 62 fruit and vegetable species [Edenharder, Kurz, John, Burgard and Seeger (1994) Fd Chem. Toxic. 32, 443–459]. However, thermal stability of the antimutagenic factors varied considerably. Application of pressurized fluid extraction to determine cadmium and zinc in plants

Abstract A procedure for the determination of Cd and Zn in plants is proposed. The metals are extracted by pressurized fluid extraction (PFE). Operational conditions are: pressure 1500 psi, temperature 75 °C, static time 5 min, flush volume 35%, purge time 60 s, cycles 1 and 1,2-diaminocyclohexane- N , N , N ′, N ′-tetraacetic acid (CDTA) 0.01 M at pH 4.5 as extracting solution. Truncated recombinant light harvesting complex II proteins are substrates for a protein kinase associated with photosystem II core complexes

AbstractPrevious studies directed towards understanding phosphorylation of the chlorophyll a/b binding proteins comprising light harvesting complex II (LHC II) have concentrated on a single phosphorylation site located close to the N-terminus of the mature proteins. Here we show that a series of recombinant pea Lhcb1 proteins, each missing an N-terminal segment including this site, are nevertheless phosphorylated by a protein kinase associated with a photosystem II core complex preparation. An Lhcb1 protein missing the first 58 amino acid residues is not, however, phosphorylated.
