Impact of Nitrogen Addition on Wine Fermentation by S. cerevisiae Strains with Different Nitrogen Requirements

In modern oenology, supplementation of nitrogen sources is an important strategy to prevent sluggish or stuck fermentation. The present study thoroughly determined the effect of nitrogen addition timing and nitrogen source type on fermentation kinetics and aroma production, carried out by yeast strains with low and high nitrogen requirements. The results revealed that yeast strains with different nitrogen requirements have divergent reactions to nitrogen addition. Nitrogen addition clearly shortened the fermentation duration, especially for the high-nitrogen-demanding yeast strain. Microbial Succession in Spontaneously Fermented Grape Must Before, During and After Stuck Fermentation

The microbial succession in spontaneously fermenting Riesling must was investigated from the beginning (pressing) until the end (sulphuring) of the fermentation in two harvest years (2008 and 2009) at a Moselle winery (Germany). In both years, the fermentation was interrupted by a stuck period. The length of the stuck period varied considerably (20 weeks in 2008 and one week in 2009). Biochemical aspects of stuck and sluggish fermentation in grape must

Recently a number of studies have focused on the factors responsible for the occurrence of stuck and sluggish fermentations. Results from these studies indicate that together with nutritional deficiencies and inhibitory substances, technological practices could lead to such situations. This review explains, from a biochemical point of view, the influence of nutritional deficiencies, inhibitory substances and technological practices on yeast cell development and physiology and the fermentation process.

Fault detection for continuous-time switched systems under asynchronous switching

In this chapter, the problem of FD for continuous-time switched systems under asynchronous switching is investigated. The designed FD filter is assumed to be asynchronous with the original systems. Attention is focused on designing a FD filter such that the estimation error between the residual and the fault is minimized in the sense of H ∞ norm. By employing piecewise Lyapunov function and ADT techniques, a sufficient condition for the existence of such a filter is exploited in terms of certain LMIs. Finally, an example is provided to illustrate the effectiveness of the proposed approach.

The paper presents the experimental verification of a general mathematical model of Voltage Source Inverters (VSI) able to simulate fault conditions and which is also useful for the simulation of fault-tolerant systems for different applications. In general, in the past, the problem of faulty inverters modeling has been addressed specifically by considering faults on the different phases as separate cases. Simple Circuit Models for Studying Global Earthing Systems

The paper proposes three simple circuit models for the simulation of the behaviour of a global earthing system during different fault events. The models allow one the evaluation of the maximum earth potential rise at every possible fault location and for every possible fault event. Vibration analysis for bearing fault detection and classification using an intelligent filter

Abstract This paper proposes an intelligent method based on artificial neural networks (ANNs) to detect bearing defects of induction motors.
