Abstract Caciocavallo Palermitano is a typical stretched-curd cheese that has been produced over the centuries in Sicily according to traditional cheesemaking technology and using raw milk from autochthonous cow breeds reared at pasture. The objective of this experiment was to evaluate the effects of the farming system and processing technology on the characteristics of Caciocavallo Palermitano cheese, with particular regard to the fatty acid profile. The biofilms of 12 wooden vats used for the production of the traditional stretched cheeses Caciocavallo Palermitano and PDO Vastedda della valle del Belìce were investigated. Salmonella spp. and Listeria monocytogenes were never detected. Total coliforms were at low numbers with Escherichia coli found only in three vats. Coagulase-positive staphylococci (CPS) were below the enumeration limit, whereas lactic acid bacteria (LAB) dominated the surfaces of all vats. In general, the dominance was showed by coccus LAB. Abstract The present work was carried out to evaluate the microbiological and physicochemical composition of salamis produced with the meat of beef, horse, wild boar and pork. Salami productions occurred under controlled laboratory conditions to exclude butchery environmental contaminations, without the addition of nitrate and nitrite. A trophic niche overlap in native and alien turtle species can lead to competitive interactions whereby allochthonous turtles may outcompete autochthonous individuals and eventually affect viability of natural populations. The European pond turtle (Emys orbicularis) is an autochthonous species threatened by habitat encroachment and competition with the red-eared slider (Trachemys scripta elegans). The latter is an invasive species introduced in Europe from midwestern United States as a pet and now widespread in the natural habitats of E. orbicularis. By-catch of cetaceans and other species of conservation concern during pair trawl fishing operations in the Adriatic Sea (Italy)

By-catch is one of the main sources of anthropogenic mortality in marine species of conservation concern worldwide. Between 2006 and 2008, the Consorzio Nazionale Interuniversitario per le Scienze del Mare (CoNISMa) coordinated a monitoring programme of cetacean by-catch in Italian pelagic trawlers, funded in compliance with European Regulation 812/2004. Sixteen independent observers monitored a total of 3141 hauls. The observation coverage ranged between 0.9 and 6.3% of the regional fishing effort. Hatching Success of Caretta caretta on a Mediterranean Volcanic Beach: Impacts from Environmental Parameters and Substrate Composition

New data on the potential impact of environmental parameters and the mineralogical nature of the substrate on the hatching success of the loggerhead sea turtle Caretta caretta on a volcanic beach on Linosa Island in the central Mediterranean Sea are reported. During 2 years of investigation (2018-19), five nests were observed. The temperature and moisture of the nests were determined along with the grain size and mineralogical nature of the substrate. The temperature values of the nests recorded at depths of 5 and 35 cm showed an average temperature incubation of 32.2°C ± 1.4°C and 32.8°C ± 1.6°C, respectively, with peaks close to 37°C.
