International audience; Taste buds constantly bathe in saliva, or more precisely in the oral fluid (termed whole saliva) made of secreted saliva, plasma exudate, shedding cells and microorganisms. Furthermore during eating, whole saliva is mixed with the food containing tastants. The various documented actions of saliva will be reviewed: protection of the integrity and functionality of the anatomical taste structures, dissolution and transport of taste molecules or binding between salivary components and tastants, with different consequences on taste perception. Terahertz imaging is an interesting route for biomedical analysis. In particular, cancer imaging is a subject of study for different teams [1,2]. A work is done in Bordeaux in partnership with a hospital to do terahertz analysis of breast tissue. This work is done in reflection with time domain imaging setup with fresh samples. The retina and the brain are two nervous tissues rich in lipids. Aging and metabolic syndrome (MetS) are associated with functional and physiological alterations of these tissues as well as modifications in the composition of the gut microbiota. The global objective of this thesis work is to understand the lipid and homeostatic alterations in aging and MetS contexts in the retina and the brain. Aim: The purpose of this study was to re-examine central and peripheral origins of neuromuscular fatigue after a highly strenuous eccentric exercise of the knee extensor muscles (KE) using both voluntary/evoked contractions and electromyographic recordings (EMG).Methods: Before, and 30 min after 15 min of intermittent one-logged downhill running, maximal percutaneous electrical stimulations (single twitch, 0.5 s tetanus at 20 Hz and 80 Hz) were applied to the femoral nerve of 10 male subjects.
