Impact on flavour release of the structure of composite gels containing polysaccharides: Example of the fruit préparations

The main objective of this study was to understand the respective rôle of the structure of a food product and of the physicochemical interactions on flavour release. For that purpose, fruit préparations hâve been chosen as model matrices. Those matrices contain a polysaccharide as gelling agent, a cross-linked waxy corn starch (1.4%), a high sucrose content (35%), an acidic buffer and a strawberry aroma (17 molécules). Theoretical morphology of tetrapod skull networks

Abstract Network models of the tetrapod skull in which nodes represent bones and links represent sutures have recently offered new insights into the structural constraints underlying the evolutionary reduction of bone number in the tetrapod skull, known as Williston's Law. Here, we have built null network model-derived generative morphospaces of the tetrapod skull using random, preferential attachment, and geometric proximity growth rules. Our results indicate that geometric proximity is the best null model to explain the disparity of skull structures under two structural constraints: bilateral symmetry and presence of unpaired bones. The Hercynian orogenic belt of Europe consists of a central crystalline ridge which is accompanied on both sides by a rather unmetamorphosed foldbelt. It is speculated that the crystalline ridge represents some kind of island arc system underlain by a segment of continental crust. On both sides this island arc system was involved in subduction of oceanic crust, first of the Mideuropean Sea in the North and then of the Paleotethys in the South. Recent Exploits of the ISOLTRAP Mass Spectrometer

Abstract The Penning-trap mass spectrometer ISOLTRAP, located at the isotope-separator facility ISOLDE (CERN), is presented in its current form taking into account technical developments since 2007. Three areas of developments are presented. The reference ion sources have been modified to guarantee a sufficient supply of reference ions for mass measurements and systematic studies. High-Precision Proton-Capture Q Values for 25Al(p,γ)26Si and 30P(p,γ)31Si

The masses of astrophysically relevant nuclei, 25Al and 30P, have recently been measured with the JYFLTRAP double Penning trap at the new IGISOL-4 facility at the University of Jyväskylä. Unparalleled precisions of 63 and 64 eV were achieved for the 25Al and 30P masses, respectively. The proton-capture Q values for 25Al(p, γ)26Si and 30P(p, γ)31S were also determined, and their precisions improved by a factor of 4 and 2, respectively, in comparison with AME12. The impact of the more precise values on the resonant proton-capture rate has also been studied. peerReviewed

Mass Measurements for the rp Process

One of the key parameters for the reaction network calculations for the rapid proton capture (rp) process, occurring e.g., in type I X-ray bursts, are the masses of the involved nuclei. Nowadays, masses of even rather exotic nuclei can be measured very precisely employing Penning-trap mass spectrometry. With the JYFLTRAP Penning trap at the IGISOL facility, masses of around 100 neutron-deficient nuclei have been determined with a typical precision of a few keV. Most recently, 25Al, 30P, 31Cl, and 52Co have been measured.
