Determination of taste-active compounds of a bitter camembert cheese by omission tests

The taste-active compounds of a Camembert cheese selected for its intense bitterness defect were investigated. The water-soluble fraction (WSE) was extracted with pure water and fractionated by successive tangential ultrafiltrations and nanofiltration. The physicochemical assessment of these fractions led to the construction of a model WSE which was compared by sensory evaluation to the crude water-soluble extract, using a panel of 16 trained tasters. As no significant difference was perceived, this model WSE was then used directly or mixed with other cheese components for omission tests. Modelling human neurodevelopmental disorders is important in biomedical research since the brain cannot be easily accessed in humans. In this chapter, we describe a series of standardized procedures for the reliable analysis of neuroanatomical phenotypes (NAPs) of the adult mouse brain using quantitative 2D histological practices. Acoustical properties of air-saturated porous material with periodically distributed dead-end pores

International audience; A theoretical and numerical study of the sound propagation in air-saturated porous media with straight main pores bearing lateral cavities (dead-ends) is presented. The lateral cavities are located at " nodes " periodically spaced along each main pore. The effect of periodicity in the distribution of the lateral cavities is studied, and the low frequency limit valid for the closely spaced dead-ends is considered separately. It is shown that the absorption coefficient and transmission loss are influenced by the viscous and thermal losses in the main pores as well as their perforation rate. Numerical vibroacoustic analysis of plates with constrained-layer damping patches

International audience; A numerical vibroacoustic model that can manage multilayered plates locally covered with damping patches is presented. All the layers can have an on-axis orthotropic viscoelastic behavior. Continuity of displacements and transverse shear stresses at each interface is enforced, which permits to write the entire displacement field in function of the displacements of the-common-first layer, leading to a two-dimensional plate model. Phase-Noise and Amplitude-Noise Measurement of DACs and DDSs

This article proposes a method for the measurement of Phase Noise (PN, or PM noise) and Amplitude Noise (AN, or AM noise) of Digital-to-Analog Converters (DAC) and Direct Digital Synthesizers (DDS) based on modulation-index amplification. The carrier is first reduced by a controlled amount (30-40 dB) by adding a reference signal of nearly equal amplitude and opposite in phase. Then, residual carrier and noise sidebands are amplified and sent to a conventional PN analyzer. The main virtues of our method are: (i) the noise specs of the PN analyzer are relaxed by a factor equal to the carrier suppression ratio; and, (ii) the capability to measure the AN using a PN analyzer, with no need for th…

Frequency Stability Measurement of Cryogenic Sapphire Oscillators with a Multichannel Tracking DDS and the Two-Sample Covariance

This article shows the first measurement of three 100 MHz signals exhibiting fluctuations from 2E-16 to parts in 1E-15 for integration time tau between 1 s and 1 day. Such stable signals are provided by three Cryogenic Sapphire Oscillators (CSOs) operating at about 10 GHz, also delivering the 100 MHz output via a dedicated synthesizer. The measurement is made possible by a 6-channel Tracking DDS (TDDS) and the two-sample covariance tool, used to estimate the Allan variance. The use of two TDDS channels per CSO enables high rejection of the instrument background noise. Time-dependent screening explains the ultrafast excitonic signal rise in 2D semiconductors

We calculate the time evolution of the transient reflection signal in an MoS$_2$ monolayer on a SiO$_2$/Si substrate using first-principles out-of-equilibrium real-time methods. Our simulations provide a simple and intuitive physical picture for the delayed, yet ultrafast, evolution of the signal whose rise time depends on the excess energy of the pump laser: at laser energies above the A- and B-exciton, the pump pulse excites electrons and holes far away from the K valleys in the first Brillouin zone. Electron-phonon and hole-phonon scattering lead to a gradual relaxation of the carriers towards small $\textit{Active Excitonic Regions}$ around K, enhancing the dielectric screening. The acc…
