Characterization of key aroma compounds in vegetable proteins foods

International audience; The flavour profile of vegetable proteins food is complex due to the presence of a large number of compounds belonging to different chemical classes. The manufacturing process use many parameters of which temperature plays a role in the generation of volatile compounds.The flavour profile of two vegetable proteins sample (high and low thermal processing) were studied. GC-MS analyses detected and identified 71 aroma compounds (pyrazines, alcohols, ketones, aldehydes) in the two samples. Quantification showed a difference between the two thermal treatments. GC-O analysis described 70 olfactive areas, 39 of which attributed to a chemical compound.

Assessment of Organochlorine Pesticide Residues in West African City Farms: Banjul and Dakar Case Study

Validated analytical procedures for the determination of 21 organochlorine pesticides have been applied to 74 water samples, 76 soil samples, and 160 vegetable samples from nine Sene-Gambian farms. Mean pesticide residue levels found were compared to the results of other studies. The main contaminants were DDTs in water (231.9 ng/L), in soil (71.4 ng/g), and in vegetables (5.03 ng/g). The distribution of pesticide residues in water and neighboring soils and the soil-plant transfer of these pesticides is briefly discussed. Influence of the functionalisation of mesoporous silica material UVM-7 on polyphenol oxidase enzyme capture and enzymatic browning

Polyphenol oxidase (PPO), also known as tyrosinase and catechol oxidase, is the enzyme responsible for enzymatic browning in foods. It causes undesirable organoleptic, nutritional and colour changes. Here, we report the preparation of five nanomaterials and a study of their ability to modulate PPO enzyme activity. The materials consist of UVM-7 supports (a mesoporous silica material) modified with diverse functional groups (i.e. amine, carboxylic acid, isocyanate, alkane and pyridine). Uptake and bioavailability of persistant organic pollutants by plants grown in contaminated soil

This paper assesses the uptake of persistent organic pollutants (POP's) into plants. In particular, uptake of alpha-endosulfan, beta-endosulfan and endosulfan sulfate from lettuce. The lettuce plants were grown on compost that had previously been contaminated at 10 and 50 microg g(-1) per POP. The soil was slurry spiked by adding the appropriate amount of POP in acetone in an approximate ratio of 1 ratio 2, w/v soil ratio solvent. The solvent was left to evaporate at ambient temperature for 24 hours. Lettuce plants were grown under artificial daylight for 12 hours a day.
