Addition of pasture plant essential oil in milk: Influence on chemical and sensory properties of milk and cheese

The aim of this experiment was to study the effect of the addition, to milk, of an essential oil (EO) obtained from the hydrodistillation of plants collected from a mountain natural pasture on the milk and cheese sensory properties. The EO was mainly composed of terpenoid compounds (67 of the 95 compounds identified) as well as ketones, aldehydes, alcohols, esters, alkanes, and benzenic compounds. In milk, the addition of this EO at the concentration of 0.1 microL/L did not influence its sensory properties, whereas at 1.0 microL/L, sensory properties were modified. Fat and salt contents affect the in-mouth temporal sodium release and saltiness perception of chicken sausages

In cooked meats, sodium chloride is involved in taste, texture and flavour release. So a reduction in the salt content may have an impact on overall perception and acceptability. The aim of this study was to evaluate the influence of composition on sodium release and saltiness intensity in chicken sausages. The rheological properties of the sausages differed according to composition. Temporal sodium release and temporal saltiness intensity were evaluated by four selected subjects when eating sausages. Pectin concentration, Molecular Weight and Degree of Esterification : Influence on Volatile Composition and Sensory Characteristics of Strawberry Jam

Composition of headspace, consistency, taste and flavor characteristics were determined in jams made with different pectins. At usual concentrations, high methoxylated pectin induced an undesirable modification of typical flavor and intensity of flavor and taste, whereas low methoxylated pectin induced few alterations. At fixed concentration and molecular weight, a decrease in degree of esterification produced a significant decrease in consistency and noticeable modifications of the flavor perception and headspace composition, but no taste alteration. Mechanical reduction of pectin molecular weight significantly modified only the consistency.

This paper looks at leadership communication in the context of online multiplayer games and the groups that operate within them. In multiplayer games promoting teamwork and long-term cooperation, issues of management and leadership are prevalent. The study explores the experiences that members of multiplayer communities have towards leadership in multiplayer games by looking at one specific case of organised team play within the framework of a turn-based online strategy game. In its stage proposals he left the Vitruvian and Palladian models, followed in the typological definition, eliminating the architectural frons scænæ frons and preferring sets painted. Thus, fictitious architecture fit each representation but it differed from building’s architecture appropriateness.

Collaborative Musical Creativity between Students and Adults: The Sonorous Paella

While creativity is a key element of contemporary curriculum frameworks around the world, it is still insufficiently fostered in formal education settings. This study analyzes a project for collaborative musical creativity, entitled The Sonorous Paella. Participants (N = 12) were eight Year 4 secondary students, two professional musicians, an artist-in-residence, and a music teacher. Quite often fantastic literature has been studied using ideas from theoretical physics in order to verify how the development of the latter modifies the reader's perception of the former. Instead, this article proposes the opposite: this article will explore theoretical physics using the ideas from the fantastic. The core principle here is that both reflect on the reality and fracture it, changing the reader's reality paradigm. While physics changes it from reality, using to it the principles of the mathematics, the fantastic does this using (and fracturing) a fictional space.
