Abstract Micronutrient deficiency is common in obese patients admitted for bariatric surgery, especially, a considerable prevalence of low levels of vitamin D, folic acid, vitamin B1, vitamin B12, vitamin A, vitamin E, zinc, iron, and selenium has been demonstrated. Long-Term Administration of High Dose Vitamin A to Rats Does Not Cause Fetal Malformations: Macroscopic, Skeletal and Physicochemical Finds

A rat model was used to investigate whether high oral doses of vitamin A lead to fetal malformations and to what extent retinyl esters (RES) are transferred from the mother to the fetuses. Retinol and RES concentrations in plasma behave similarly in rats and humans. When high concentrations of vitamin A are administered, plasma retinol concentrations remain relatively constant, whereas plasma RES increased in parallel with the dose. Abstract Ultrahigh-pressure (UHP) hydrostatic exposure in excess of 100 MPa is being used to inactivate micro-organisms as well as to induce texture changes to foods without thermal degradation. Influence of storage and in vitro gastrointestinal digestion on totqal antioxidant capacity of fruit beverages

Eight fruit beverages containing grape, orange and apricot, with/without iron and/or zinc and with/without milk added were analyzed for total antioxidant capacity (ORAC and TEAC methods), ascorbic acid content, and total polyphenols. The influence of cold storage (2-4 degrees C) during the product shelf-life (135 days) and antioxidant capacity after an in vitro gastrointestinal digestion were evaluated. Antioxidant capacity for all beverages together increased significantly (p < 0.05) at the end of storage (16.4% and 12.8% for ORAC and TEAC, respectively), whereas ascorbic acid remained stable. Abstract Background Low concentration of plasma pyridoxal-5-phosphate (PLP) is associated with hyperhomocysteinemia and inflammation. Most methods for the measurement of plasma PLP require large specimen volume and involve the use of toxic reagents. Methods We have developed a HPLC method for the measurement of PLP and 4-pyridoxic acid (4-PA) in plasma, which requires small specimen volume. The samples are prepared without adding any toxic reagents. Furthermore, we have examined whether intake of vitamin B 6 affects the concentration of plasma PLP and 4-PA. Use of nutritional supplement to improve performance in professional soccer players: A case report

The aim of the study was to investigate the intake percentage and the satisfaction level of some nutritional supplements used by professional soccer players. Twenty-nine professional soccer players (age: 24.6 ± 5.2 years, body weight: 79.2 ± 4.9 kg, body height: 1.83 ± 0.05 m) belonging to a team of Serie A were interviewed on: frequency of use, tolerability, and acceptance of the supplements (creatine, β-alanine, whey protein, nitrates, vitamin D3, caffeine) proposed by the nutritionist team. Kinetics of green asparagus ascorbic acid heated in a high-temperature thermoresistometer

Thermal degradation of green asparagus ascorbic acid in high-temperature short-time conditions was studied by heating in a five-channel computer-controlled thermoresistometer. Ascorbic acid was heated to between 110  °C and 140  °C and the degradation kinetics were analyzed assuming that two different inactivation mechanisms were occurring, one aerobic and the other anaerobic. The two reactions followed first-order kinetics, with E a=12.3(2.0) kcal/mol and k 125  °C=47.0(3.0)×10–3 s–1 for the aerobic oxidation, and E a=6.1(1.4) kcal/mol and k 125  °C=4.1(0.2)×10–3 s–1 for the anaerobic degradation.

Effect of corn oil and vitamin E on the oxidative status of adipose tissues and liver in rat

Abstract The diet is usually formed of a varying antioxidant and fatty acid content acquired from oils. The purpose of this study was to determine the effects of corn oil-rich diet supplemented or not with vitamin E on oxidative damage and antioxidant status in liver and adipose tissue of rat. Male Wistar rats were fed during 4 weeks with a hyperlipidic diet. The groups fed with hyperlipidic diets showed lower activity levels than the control groups with the exception of superoxide dismutase and glutathione peroxidase in brown adipose tissue.
