International audience; The purpose of this study was to model the extraction unit operation of the cassava starch manufacturing process and to propose a realistic recycling simulation in order to reduce the volumes of effluents. The model was developed from reactors which are commonly used for cassava starch extraction at a household scale in Vietnam. The reactors were tested using inflow starch as a marker at the beginning of the batch process. The experimental residence time distribution (RTDexp) was calculated by the outflow of the starch concentration. The persistence of the pathogen along the food chain can be associated with its ability to form biofilms on inert surfaces. While most of the phenotypes associated with biofilms are related to their spatial organization, most published data comparing biofilm formation by L. monocytogenes isolates are based on the quantitative crystal violet assay, which does not give access to structural information. Dietary lipids are detected by the gustatory system in rodents and humans. Two candidate lipid-receptors are found in taste buds: CD36, which is involved in the fat taste as shown by studies conducted in our laboratory, and GPR120. Our results show that GPR120 is not directly involved in the gustatory detection of lipids in mice, but could rather be involved in the modulation of the sensitivity for fat. When this gustatory system works properly, food choices can meet the organism’s energy needs. Besides, the pleasure brought by the consumption of palatable foods is satisfied. Texture is an important dimension of food acceptance in infancy but few works investigated its role. The present objectives were to describe the evolution of food texture acceptance and feeding skills in 6 to 18-mo-old. Two groups of healthy children participated in this study conducted at the laboratory at 6, 8, 10mo (n=24) and at 12, 15 and 18mo (n=25). They were offered foods with different textures (smooth and rough purees, cooked and sticky pieces, raw and hard foods) at an earlier age than current practices in France.
