Development of an ad hoc natural whey starter culture for the production of Vastedda della valle del Belìce cheese

This work was aimed to characterize the autochthonous lactic acid bacteria (LAB) of PDO Vastedda della valle del Belìce cheeses, produced in several dairy factories, for the development of an ad hoc starter culture preparation for the production of this cheese. To this purpose, winter and spring productions were analysed, in order to isolate LAB adapted to perform the fermentation at low temperatures. Plate counts showed the total microbial counts (TMC) till levels of 9 -1almost 10 CFU g and all cheese samples were dominated by coccus LAB. In the present study, the chemical composition of the essential oil from aerial parts of Parentucellia latifolia (L.) Caruel collected in Central Sicily was analyzed by gas chromatography and gas chromatography–mass spectrometry. The results showed the presence of sesquiterpene hydrocarbons, with germacrene D and germacrene B accounting, respectively, for 59.2% and 24.3% of the total oil. Red grape Nero d’Avola cultivar grape pomace powder (GPP) was applied during fresh ovine cheese production in order to increase polyphenol content. Before cheeses were produced, the bacteria of a freeze-dried commercial starter culture were isolated and tested in vitro against GPP. Two dominant strains, both resistant to GPP, were identified. Thestarter culture was inoculated in pasteurized ewe’s milk and the curd was divided into two bulks, one added with 1% (w/w) GPP and another one GPP-free. The essential oil of aerial parts of Micromeria fruticulosa (Lamiaceae) growing wild in Southern Italy was obtained by hydrodistillation and analysed by GC and GC–MS. Sixty-one compounds, representing 91.3% of the oil, were identified. The major components were γ-terpinene (14.5%), β-caryophyllene (12.6%), p-cymene (8.9%), α-pinene (8.2%) and β-bisabolene (7.2%).
