Cette contribution expose les problematiques du PCR « Des Traces et des Hommes », un projet de recherche interdisciplinaire sur les modalites d’acquisition et de traitement des matieres vegetales et animales au Paleolithique moyen en Europe occidentale. Elle presente brievement les differentes experimentations effectuees entre 2007 et 2009 et les resultats preliminaires obtenus dans chacun des themes developpes.

The genus Phagnalon Cass., included in the Asteraceae family, has a wide distribution, expanding from Macaronesia in the West to the Himalayas in the East, from South France and Nord Italy to Ethiopia and Arabian Peninsula. Various species of Phagnalon have been used in the popular medicine of several countries as medicinal herbs and food. The extracts and the secondary metabolites, have a varied application spectrum at several biological levels, with antimicrobial, antioxidant, antidiabetic, antitumor, etc. properties having been reported. The overall aim of the present thesis is to study contextual influences on food behaviour (including variables coming from the environment and from the consumer). To this purpose, an immersive method using a space with physical elements was used, in order to evoke a realistic situation within a laboratory setting. Here, the method consisted in designing an immersive bar evoking the situation of “having a drink in a bar”. Two variants of the bar were created and five studies were implemented in these spaces to study how context influences food choices and evaluation.
