During aging, the oral health changes and sometimes eating food can be a real challenge as food can be hard to masticate, humidify or swallow. Piles of animal bones from large domesticates – cattle and horses – have been identified on various settlement sites in Gaul ; these have undergone practices readily distinguishable from domestic butchery. Already perceptible on rural sites, these indications of a special butchery regime for cattle become more and more apparent elsewhere in tandem with the increasingly urbanised character of settlements. Cattle was also sacrificed during the Iron Age at sanctuaries, but only a small proportion of the meat produced was consumed in banquets held on site. Apart from an annotated edition of the articles on Roman law and a few aticles of natural, political and penal justice, there has been no systematic and detailed study of law in the Encyclopédie. Without claiming to exhaust this huge and difficult subject, this article has a three-fold aim, namely to understand the place of jurisprudence in the work and to reconstruct its complex ramifications, to situate in the legal culture and controversies of its time, and to understand the contribution of three contributors: Toussaint (a pactitioner), Boucher d'Argis (a jurisconsult) and Jaucourt (a jusnaturalist).
