Understanding consumers' beliefs, attitudes and sensory preference is the key to a successful development and introduction of a new food. This thesis carried out a series of cross-cultural studies, France vs. Vietnam, on consumers' representation of soy foods and on sensory perception and preference of soy yogurts, a soy derived product recently developed for French market which does not exist on the Vietnamese market. Despite a favourable image of soy in terms of nutrition and health benefices, French participants reported that the barrier to its consumption was the taste of soy. Malnutrition is a major challenge in South Africa (SA), particularly in Eastern Cape and Limpopo provinces, which are predominantly black and historically disadvantaged. This thesis aims to assess the potential of Moringa oleifera (MO) as a source of nutritional improvement in the diets of mothers and their children in these provinces. Known for its nutritional benefits, MO is a plant native to India, now cultivated in SA but not widely used for human nutrition. A two-part approach was followed in this thesis. The study is based on approximately 600 monetary images attributed to Arverni, Bituriges, Carnutes, Aedui, Lingones, Sequani, Parisii, Meldi and Senones. Monetary images form the largest iconographic set provided by the Celts but paradoxically, they are not considered at their fair value in the current research. Indeed, their study is a relatively recent discipline because the Celts left no text allowing their understanding. The different themes of the images relate to religion, society and aristocracy of Iron Age.
