Impact of structural features of odorant molecules on their retention/release behaviours in dairy and pectin gels

2014

International audience; Reducing of fat content in food requires a reformulation that may cause a different perception of aroma. Maintaining an adequate level of acceptability of these reformulated products for consumers requires a better understanding of the mechanisms that control the retention of odorant molecules in food matrices. Although pectins are commonly employed as thickeners, their effect on the retention of odorant molecules in nonhomogeneous products has been examined more frequently than their effect on the retention of odorant molecules in simple gels models. The purpose of this study was to explore and compare the respective effects of pectin in simple model systems. The rel…

In vitro digestion of two age-tailored dairy products in the aging gastrointestinal tract

2023

For older adults (> 65 years old), undernutrition is a severe health problem that can impact the quality of life, induce or aggravate the development of diseases, and reduce life expectancy. Undernutrition can be defined as an inadequate intake of dietary energy and proteins combined with a low muscle mass. Diet-induced muscle mass and strength loss in older adults may be due to insufficient protein intake. Therefore, older adults need to increase the amount of high-quality ingested proteins, particularly foods rich in leucine, to promote muscle health. However, it is still unclear if changes in protein digestibility and absorption kinetics in old age may affect the anabolic effect of high-…

Genetic structure of Tunisian sheep breeds as inferred from genome-wide SNP markers

2020

Abstract Assessing the status of genetic variability of native sheep breeds could provide important clues for research and policy makers to devise better strategies for the conservation and management of genetic resources. In this study, a genetic investigation of Tunisian sheep breeds using a genome-wide scan of approximately 50,000 SNPs was performed. To reconstruct genetic structure and relationships among four sheep breeds, 40 samples belonging to fat-tailed Barbarine, Queue Fine de l’Ouest, Noire de Thibar and D’Man breeds were genotyped using Illumina Ovine SNP50 BeadChip. Tunisian breeds averaged 96 % polymorphic loci with an expected heterozygosity (He = 0.36). Genetic analysis of r…

Nanoelectrospray with ion-trap mass spectrometry for the determination of beta-casomorphins in derived milk products.

2009

Beta-casomorphins (b-CMs) are bioactive peptides derived from casein with opioid agonist effects similar to morphine. The use of electrospray (ESI) with quadrupole ion-trap mass spectrometry (QIT-MS) for these compounds in two matrices, cheese and milk, was examined. It was compared to a liquid chromatography (LC) coupled to mass spectrometry (LC-MS), and a "soft" ionisation technique, NanoMate, with selected ion monitoring (SIM), which are unreliable for the determination of trace casomorphins in derived milk products. b-CM mass fragmentation pathways were done for the four most common b-CMs: beta-casomorphin (1-5) bovine (b-CM-5), beta-casomorphin (1-7) bovine (b-CM-7), [D-Ala2, D-Pro4,Ty…

Effects of solid–liquid separation on recovering residual methane and nitrogen from digested dairy cow manure

2006

The feasibility of optimizing methane and nitrogen recovery of samples obtained from farm biogas digester (35 degrees C) and post-storage tank (where digested material is stored for 9-12 months) was studied by separating the materials into different fractions using 2, 1, 0.5 and 0.25 mm sieves. Mass-balances revealed that digested material mainly consists of0.25 mm (60-69%) and2 mm (18-27%) fractions, while fractions between 2 and 0.2 mm made the rest. Incubation of solid fractions0.25 mm of digester material at 35 degrees C resulted in specific methane yields of 0.060-0.085 m(3)kg(-1) volatile solids (VS) during initial 30-50 d and 0.16-0.18 m(3)kg(-1)VS at the end of 340 d incubation. Anaerobic on-site treatment of black water and dairy parlour wastewater in UASB-septic tanks at low temperatures.

2004

Anaerobic on-site treatment of synthetic black water (BW) and dairy parlour wastewater (DPWW) was studied in two-phased upflow anaerobic sludge blanket (UASB)-septic tanks at low temperatures (10-20 degrees C). At all temperatures, total chemical oxygen demand (COD(t)) removal was above 90% with BW and above 80% with DPWW and removal of total suspended solids (TSS) above 90% with both wastewaters. Moreover, dissolved COD (COD(dis)) removal was approx. 70% with both wastewaters indicating good biological activity of the sludges. With BW, a single-phased reactor was found sufficient for good COD removals, while with DPWW, a two-phased process was required. Temperature optimum of reactor sludg…

Seasonal response of vegetation on pollutants removal in constructed wetland system treating dairy wastewater

2022

Constructed wetland systems provide the ideal solution for small and medium dairy farms as they can be built close to the farm and are easy to manage and use. However, their perfomance is significantly affected by vegetation activity during the year. The aims of the present study were to assess the treatment of dairy wastewater (DWW) by a horizontal subsurface flow system (HSSFs) and the effect of plants in the removal efficiency (RE) of BOD5, COD, total N (TN) and total P (TP), in Sicily (Italy). The HSSFs treated 6/7 m3 per day of wastewater produced by a small dairy farm subsequent to biological treatment. The system included two units which were separately planted with Arundo donax L. a…

Fatty Acid Composition of Salami Made by Meat from Different Commercial Categories of Indigenous Dairy Cattle

2021

Simple Summary The Cinisara is a Sicilian breed raised on pasture to produce the Caciocavallo Palermitano cheese. Even if it is penalized by competition with meat breeds, characterized by higher growth rate and yield, the production of fresh meat represents a considerable added value for the smallfarms. The meat of Cinisara is not appreciated, despite having a high content of iron, vitamin E, conjugated linoleic acid (CLA), and low content of lipids and cholesterol, above all due to incorrect management of the supply chain phases that negatively affects the quality of the final product. Alternative production such as bresaola and salami could contribute to the enhancement of Cinisara meat. …
